- Heat the oil in a heavy saucepan over med-high heat. Add in the onion and bell pepper and saute/fry stirring constantly, till the onion is golden brown, about 5 min. Stir in the rice, chili pwdr, oregano, cumin and cayenne. Add in the broth, tomatoes, and lentils, bring to a boil, reduce the heat, cover and cook about 45-50 min, till the liquid is absorbed and the rice and lentils are tender.
- Fluff with a fork, taste and adjust seasonings, serve.
- NOTES : Here is a delicious accompaniment to a roast chicken, poached fish or possibly broiled meat-or possibly a hearty and very healthy vegetarian entree.
