Red Rice Salad

Ingredientes

  • 150 gm Original camargue red rice
  • 2 x Chillies, finely sliced
  • 2 x Mini pitta breads, finely minced
  • 3 Tbsp. Extra virgin olive oil
  • 1 handf radish leaves, rinsed and roughly minced
  • 1 x Lime
  • 1 x Lemon
  •     Salt & pepper

Direcciones

  1. 1 Fill a third of a pressure cooker with boiling water. Pour in the rice and cook on full for 15-18 min.
  2. 2 When the red button pops up on the pressure cooker, release the steam.
  3. Drain the rice and mix it in a bowl with the chillies and pitta bread.
  4. 3 Add in the extra virgin olive oil, radish leaves and the zest and juice of the lemon and lime. Season to taste.
