Ingredientes

  • 2 lb Grnd round (85% lean)
  • 1 lb Grnd pork
  • 2 med Onions minced
  • 1 lrg Red bell pepper minced
  • 4 x Garlic cloves chopped
  • 3 x Fresh jalapeno peppers seeded and chopped
  •     (or possibly 1/4 to 1/2 tsp crushed warm red pepper)
  • 1/4 c. Chili pwdr
  • 28 ounce Italian peeled tomatoes - (1 can) cut up, juices reserved
  • 12 ounce Beer - (1 bottle) * see note
  • 6 ounce Tomato paste - (1 can)
  • 2 tsp Salt
  • 1 1/2 tsp Cumin
  • 1 1/2 tsp Oregano
  • 2 x Bay leaves
  • 1/4 c. Cornmeal
  •     Lowfat sour cream
  •     Pickled jalapeno pepper slices
  •     Shredded Cheddar cheese
  •     Minced onions

  1. Note: The secret ingredient is a tall bottle of beer. While just about any brand will do, use a Mexican dark beer, if you can find it.
  2. In a 6-qt Dutch oven, cook grnd round, grnd pork, onions, bell pepper, garlic, an jalapeno peppers over medium-high heat, stirring often to break up lumps of meat, till meat loses its pink color, about 8 min. Add in chili pwdr and cook, stirring, 1 minute.
  3. Stir in tomatoes with their juice, beer, tomato paste, salt, cumin, oregano, and bay leaves. Bring to a simmer, stirring often. Reduce heat to low and simmer, uncovered, stirring occasionally, till chili is slightly thickened, about 1 3/4 hrs.
  4. In a small bowl, stir together cornmeal and 1/2 c. chili till smooth. Stir cornmeal mix into chili and cook till thickened, about 5 min.
  5. Place lowfat sour cream, pickled jalapenos, Cheddar cheese, and onions in separate dishes. Serve chili in bowls and encourage guests to choose their own garnishes.
  6. This recipe serves 8 to 12.
