Receta RED VELVET CUPCAKES

There’s nothing like a Red Velvet Cake and Red Velvet Cupcakes are just little Red Velvet Cakes! Made these for Valentine’s Day for my sweetie. I was out of cupcake papers and used a large muffin tin that only makes six. I used confectionery sugar on three and regular canned frosting on three. They are great with cream cheese frosting, too.
- 3/4 cup white sugar
- 1 egg
- 3/4 cup oil
- 1/2 cup buttermilk
- 1 1/4 cups all-purpose flour
- 1 teaspoon vanilla flavoring
- 1/2 teaspoon baking soda
- 1/2 teaspoon cocoa
- 1/2 teaspoon white vinegar
- 1/2 ounce red food coloring
In a mixing bowl using mixer cream the sugar and egg. Add the oil, buttermilk, vanilla, and mix well. Continue mixing and add flour, baking soda, cocoa, vinegar and red food coloring. Spray muffin tins, if not using liners, with cooking spray. Fill about half full. Bake in preheated 350 degree oven for 30 minutes. Sprinkle on the sugar or frost with your favorite frosting. Makes six large cupcakes or 12 small cupcakes. (You can double this recipe for a cake.)
