Red Velvet for breakfast with these Red Velvet Muffins

Ingredientes

  • 1 1/2 cups flour
  • 2 Tbls cocoa powder
  • 3/4 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup vegetable oil
  • 1 tsp vinegar
  • 1 egg
  • 1/3 cup milk
  • 1 tsp red food coloring (I used Wilton Paste)
  • 2/3 cup chocolate chips

Direcciones

  1. Preheat oven to 375 degrees. Prepare 12 cup muffin tin with liners or spray.
  2. Combine flour, cocoa, sugar, baking soda, and salt. Set aside. In a large bowl combine vegetable oil, vinegar, egg, milk, and coloring. Mix well. Gradually add the flour mixture, stirring until just combined. Fold in chocolate chips. Fill muffins tins, sprinkle with a few more chocolate chips if desired. Bake for 14-18 minutes. Cool for a few minutes before removing from the pan.
