.%20%20I%20didn't%20have%20nearly%20that%20amount%20on-hand,%20so%20I%20went%20with%20my%20favorite%20red%20food%20coloring%20alternative:%20%20roasted,%20pureed%20beets%20(which%20I%20had%20a%20lot%20of!).%3C/p%3E%3Cp%3E(Please%20see%20this%20post%20for%20easy%20step-by-step%20instructions%20for%20roasting%20and%20pureeing%20the%3C/p%3E%3Cp%3Ebeets%20to%20get%20them%20recipe-ready.%20%20I've%20added%20them%20to%20many%3C/p%3E%3Cp%3Ebaked%20goods,%20and%20I%20have%3C/p%3E%3Cp%3Enever%20been%20able%20to%20detect%20that%20%22earthy%22%20beet%20taste.)%3C/p%3E%3Cp%3EI%20used%204%20tablespoons%20of%20beet%20puree%20to%20color%20these%20pancakes%20so%20deeply.%3C/p%3E%3Cp%3EAnd%20then%20I%20got%20a%20strong%20and%20handsome%20helper%20to%20stir%20the%20batter.%3C/p%3E%3Cp%3EI%20used%20about%201/4%20cup%20of%20batter%20per%20pancake.%3C/p%3E%3Cp%3E%22One%20of%20these%20days%22,%20I'd%20like%20to%20have%20a%20griddle.%20%20But%20for%20now,%20this%20big%20skillet%20works%20pretty%20well.%20%20I%20have%20to%20use%20a%20lot%20of%20coconut%20oil%20to%20keep%20the%20cakes%20from%20sticking,%20but%20the%20oil%20gives%20the%20outside%20of%20each%20one%20a%20delicious,%20coconut-y%20crispiness%20that%20is%20absolutely%20divine.%3C/p%3E%3Cp%3EI%20overcooked%20a%20few%20trying%20to%20get%20the%20heat%20on%20the%20skillet%20just%20right,%20but%20these%20were%20far%20from%20being%20inedible.%3C/p%3E%3Cp%3EWhile%20I%20realize%20this%20isn't%20the%20world's%20most%20appetizing%20photo,%20can%20I%20just%20tell%20you?%20%20The%20buttermilk%20in%20the%20batter%20gives%20these%20pancakes%20a%20delicious%20twang,%20and%20the%20cocoa%20powder%20lends%20a%20whisper%20of%20chocolate.%20%20For%20a%20%22wacky%22%20pancake,%20these%20are%20just%20about%20as%20good%20as%20it%20gets.%3C/p%3E%3Cp%3EThe%20icing%20contains%20buttermilk,%20milk,%20powdered%20sugar%20and%20vanilla.%20%20It's%20unusual%20yet%20equally%20fantastic%20(not%20at%20all%20in-your-face%20buttermilk).%3C/p%3E%3Cp%3EHe%20agrees.%3C/p%3E%3Cp%3EMake%20these%20for%20your%20loves%20this%20Valentine's%20Day%20for%20a%20fun%20breakfast.%3C/p%3E%3Cp%3EDo-ahead-tip:%20%20I%20love%20to%20make%20a%20huge%20batch%20of%20pancakes,%20freeze%20them%20individually%20on%20a%20baking%20sheet,%20and%20then%20transfer%20the%20frozen%20pancakes%20to%20a%20freezer%20bag.%20%20When%20I%20need%20a%20few%20for%20breakfast,%20I%20just%20pop%20them%20in%20the%20toaster%20oven%20for%204-5%20minutes.%20%20It's%20like%20a%20delicious,%20homemade%20version%20of%20frozen%20grocery%20store%20pancakes.%20%20:)%3C/p%3E%3Cp%3EThis%20recipe%20is%20Ree%20Drummond's%20(a.k.a.%20The%20Pioneer%20Woman)%20%22A%20Year%20of%20Holidays%22%20cookbook.%20%20I%20didn't%20have%20cake%20flour%20on%20hand,%20so%20I%20used%20all-purpose%20and%20it%20seems%20to%20work%20fine.%20%20I%20also%20swapped%20out%20the%20food%20coloring%20for%20the%20beet%20puree.%20%20Other%20than%20that,%20this%20is%20her%20creation.%3C/p%3E%3Cp%3ERed%20Velvet%20Pancakes%20with%20Maple-Buttermilk%20Icing%3C/p%3E%3Cp%3EMakes%20about%2020%20Pancakes%3C/p%3E%3Cp%3EPancakes:%3C/p%3E%3Cp%3EFor%20the%20pancakes:%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20the%20flour,%20baking%20powder,%20sugar,%20salt%20and%20cocoa%20powder.%20%20Whisk%20well%20to%20combine.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl,%20mix%20the%20milk,%20buttermilk,%20eggs,%20vanilla,%20and%20vinegar.%20%20(Whisk%20it%20well.)%20Now%20add%20the%20beet%20puree%20(or%20food%20coloring)%20and%20stir%20again.%3C/p%3E%3Cp%3EAdd%20the%20liquid%20mixture%20to%20the%20flour%20mixture;%20mix%20just%20until%20it%20comes%20together%20(the%20more%20you%20stir,%20the%20tougher%20the%20pancakes%20will%20be).%20%20Pour%20in%20the%20melted%20butter%20and%20stir%20(or%20whisk)%20until%20it's%20all%20combined.%3C/p%3E%3Cp%3EHeat%20a%20griddle%20over%20medium-low%20heat.%20%20Or,%20if%20you're%20like%20me%20and%20you%20don't%20have%20a%20griddle,%20melt%20about%20a%20tablespoon%20of%20coconut%20oil%20(or%20butter)%20into%20a%20large%20skillet.%20%20(I%20use%20a%20stainless%20steel%20skillet;%20if%20you're%20using%20a%20non-stick%20skillet,%20you%20may%20not%20have%20to%20use%20this%20much%20oil.)%20%20%20Use%20a%201/4%20cup%20measuring%20scoop%20and%20drop%20them%20on%20the%20skillet%20(I%20fit%20batches%20of%203%20pancakes%20onto%20my%2010-inch%20skillet).%20%20Cook%20SLOWLY%20(over%20medium%20heat)%20until%20the%20pancakes%20are%20done,%20about%202%20minutes%20per%20side.%20%20These%20look%20much%20better%20when%20they%20are%20a%20pretty%20pink%20color%20as%20opposed%20to%20scorched%20black.%20%20:)%20%20Add%20more%20oil%20to%20the%20skillet%20as%20needed%20for%20each%20batch.%3C/p%3E%3Cp%3EFor%20the%20icing:%3C/p%3E%3Cp%3EI%20found%20it%20best%20to%20do%20this%20in%20my%20stand%20mixer%20fitted%20with%20the%20whisk%20attachment.%20%20But,%20if%20you%20don't%20have%20one%20you%20can%20definitely%20just%20use%20a%20whisk.%3C/p%3E%3Cp%3ESift%20the%20powdered%20sugar%20into%20the%20bowl%20of%20an%20electric%20mixer.%20%20Add%20the%20salt%20and%20melted%20butter%20and%20whisk%20on%20medium-high%20speed%20until%20smooth.%20%20Add%20the%20buttermilk,%20milk,%20and%20maple%20syrup%20and%20whisk%20again%20until%20it's%20very%20smooth.%20%20A%20few%20small,%20unfortunate%20lumps%20may%20remain.%20%20It%20will%20still%20taste%20great.%3C/p%3E){kind=link}
