.%20The%20origin%20of%20the%20cake%20is%20often%20debated.%20Some%20say%20the%20Red%20Velvet%20Cake%20has%20ties%20to%20the%20Waldorf%20Astoria%20(Google%20for%20the%20story...similar%20to%20the%20Mrs.%20Fields%20cookie%20story).%20But%20all%20good%20little%20Southerners%20know%20that%20this%20can%E2%80%99t%20possibly%20be%20true.%20The%20Red%20Velvet%20Cake%20is%20our%20cake.%3C/p%3E%3Cp%3EAnyway,%20back%20to%20grandpa.%20My%20grandpa%20loved%20being%20the%20go-to%20guy.%20Need%20a%20lawn%20chair?%20Grandpa%20found%20one%20in%20someone%E2%80%99s%20trash%20and%20re-webbed%20it.%20Here%20you%20go.%20Need%20a%20kitchen%20garbage%20can?%20Grandpa%20knows%20how%20to%20make%20%E2%80%98em...with%20fancy%20scrolled%20cut%20outs%20too.%20My%20mom%20and%20all%20my%20aunts%20each%20have%20one.%20Need%20a%20street%20car%20replica?%20Well,%20good%20ole%20grandpa%20can%20make%20that%20too.%20He%20was%20a%20carpenter,%20by%20the%20way.%20And%20I%E2%80%99ve%20lost%20the%20street%20car%20that%20he%20made%20for%20me.%20I%20swear%20I%20left%20it%20behind%20when%20I%20moved,%20but%20my%20mom%20swears%20that%20it%E2%80%99s%20hers.%20Need%20a%20Red%20Velvet%20Cake?%20Grandpa%E2%80%99s%20got%20you%20covered.%20He%E2%80%99s%20got%20%E2%80%9Cthe%20best%20red%20velvet%20cake%20you%20ever%20tasted.%E2%80%9D%20That%E2%80%99s%20what%20he%20said%20about%20a%20lot%20of%20what%20he%20cooked.%20Hmmm...he%20may%20have%20stretched%20things%20a%20little.%3C/p%3E%3Cp%3EBut%20not%20about%20the%20cake.%20Grandpa%E2%80%99s%20Red%20Velvet%20Cake%20is%20the%20best%20I%E2%80%99ve%20ever%20tasted.%20Because%20it%20was%20my%20cake.%20He%20rarely%20made%20it%20except%20for%20my%20birthday.%20I%20was%20the%20only%20granddaughter%20for%2018%20years,%20so%20he%20spoiled%20me.%20With%20food.%20As%20was%20his%20way.%3C/p%3E%3Cp%3EHis%20version%20of%20Red%20Velvet%20Cake%20is%20moist%20and%20dense%20with%20a%20hint%20of%20cocoa.%20And%20deeply%20red.%20After%20he%20died,%20my%20grandma%20found%20his%20recipe%20for%20Red%20Velvet%20Cake%20and%20sent%20copies%20to%20me%20and%20my%20sister-in-law.%20So%20I%20can%20still%20have%20Red%20Velvet%20Cake%20on%20my%20birthday.%3C/p%3E%3Cp%3EThe%20trouble%20is,%20grandpa%20played%20when%20he%20cooked.%20He%20even%20played%20when%20he%20baked,%20not%20afraid%20to%20experiment,%20scoffing%20at%20exact%20measurements...%22You%20don't%20need%20to%20do%20all%20that!%22%20is%20what%20he%20would%20say.%20While%20the%20cake%20portion%20of%20this%20recipe%20is%20the%20real%20deal,%20I%E2%80%99ve%20had%20to%20resort%20to%20a%20different%20icing.%20Grandpa%20used%20a%20traditional%20cooked%20flour%20icing,%20or%20a%20roux%20icing.%20(See?%20You%20thought%20I%20was%20exaggerating.%20We%20use%20roux%20in%20everything%20here.)%20When%20I%20made%20the%20icing%20portion%20of%20grandpa%E2%80%99s%20recipe,%20I%20knew%20right%20away%20that%20he%E2%80%99d%20fiddled%20around%20with%20it%20and%20never%20wrote%20down%20what%20he%20did.%20It%20wasn%E2%80%99t%20quite%20the%20same.%20So,%20I%20just%20use%20a%20standard%20cream%20cheese%20icing,%20also%20an%20acceptable%20icing%20for%20Red%20Velvet%20Cake.%3C/p%3E%3Cp%3EI%20like%20to%20eat%20this%20cake%20chilled...right%20out%20the%20icebox.%20It%E2%80%99s%20easier%20to%20cut%20that%20way%20too.%20Some%20swear%20by%20pecans%20either%20pressed%20into%20the%20sides%20or%20decorating%20the%20top%20of%20the%20cake.%20I%20can%20go%20either%20way%20on%20that...sides,%20top,%20none%20at%20all.%20I%E2%80%99m%20flexible.%20I%20do%20like%20the%20cake%20to%20be%203%20layers.%20I%20think%20that%E2%80%99s%20fairly%20traditional%20and%20it%E2%80%99s%20what%20grandpa%20did.%3C/p%3E%3Cp%3EThe%20cake%20portion%20of%20the%20recipe%20is%20not%20in%20the%20format%20I%20prefer,%20but%20that's%20how%20grandpa%20wrote%20it.%3C/p%3E%3Cp%3EGrandpa%E2%80%99s%20Red%20Velvet%20Cake%3C/p%3E%3Cp%3Efrom%20Ms%20enPlace%3C/p%3E%3Cp%3EPlace%20butter%20and%20cream%20cheese%20in%20a%20mixing%20bowl.%20Mix%20to%20break%20up%20any%20lumps.%20Add%20the%20powdered%20sugar%20and%20mix%20until%20smooth%20and%20creamy.%20If%20the%20icing%20is%20too%20thick,%20add%20a%20small%20amount%20of%20milk%20and%20mix%20well.%20continue%20adding%20milk,%20small%20amounts%20at%20a%20time,%20until%20desired%20consistency%20is%20reached.%20Frost%20cake%20and%20decorate%20with%20pecans,%20if%20desired.%3C/p%3E%3Cp%3EMise%20en%20place%20for%20the%20cake.%20Icing%20will%20come%20later.%3C/p%3E%3Cp%3EStart%20by%20creaming%20the%20shortening,%20eggs,%20and%20sugar.%20Cream%20for%204-5%20minutes.%20Set%20aside.%3C/p%3E%3Cp%3ESift%20flour%20and%20cocoa%20powder%20together%203%20times.%20Trust%20me,%20do%20it%20thrice.%20There's%20still%20unincorporated%20cocoa%20powder%20after%20sifting%20once%20(2nd%20picture)%20and%20even%20after%20sifting%20twice%20(3rd%20picture).%3C/p%3E%3Cp%3EMix%20the%20flour%20mixture%20into%20the%20creamed%20mixture,%20along%20with%20the%20buttermilk.%20Oh,%20dang.%20I%20always%20grab%20a%20bowl%20that's%20too%20small.%3C/p%3E%3Cp%3EBetter.%3C/p%3E%3Cp%3EAdd%20the%20vanilla%20and%20red%20food%20coloring.%20Who%20do%20I%20have%20to%20kill%20for%20some%20red%20velvet%20cake?!!%3C/p%3E%3Cp%3EBy%20the%20way%20wipe%20up%20any%20spills%20right%20away.%20The%20food%20coloring%20may%20stain.%3C/p%3E%3Cp%3ENow%20for%20the%20fun%20part.%20Dissolve%201%20tsp%20baking%20soda%20in%201%20T%20white%20vinegar.%20Good%20for%20making%20volcanoes,%20clearing%20out%20drains,%20and%20helping%20red%20velvet%20cakes%20rise.%20Now,%20don't%20fool%20around.%20Do%20this%20quickly.%20From%20here%20on%20out%20work%20as%20fast%20as%20possible%20to%20get%20the%20cake%20in%20the%20oven.%3C/p%3E%3Cp%3EQuickly%20fold%20the%20vinegar%20mixture%20into%20the%20batter.%3C/p%3E%3Cp%3EQuickly%20pour%20batter%20into%202%20or%203%20prepared%20round%20cake%20pans%20(greased%20and%20floured--or%20use%20cocoa%20powder).%3C/p%3E%3Cp%3EBake%20in%20a%20preheated%20350%20degree%20oven.%20If%20using%202%20pans,%20bake%20for%2030-40%20minutes%20or%20until%20a%20toothpick%20comes%20out%20clean.%20For%203%20pans,%20bake%20for%20about%2020-25%20minutes,%20or%20use%20the%20toothpick%20deal.%20Check%20out%20this%20color!%3C/p%3E%3Cp%3EAfter%20the%20layers%20cool,%20make%20the%20icing%20and%20assemble.%20Here's%20the%20mise%20en%20place%20for%20the%20icing.%20This%20is%20double%20the%20amount%20of%20powdered%20sugar%20needed.%20Also,%20I%20add%20a%20little%20milk%20to%20thin%20out%20the%20icing,%20making%20it%20easier%20to%20spread.%20Pecans%20are%20optional.%3C/p%3E%3Cp%3EI%20like%20to%20get%20the%20butter%20and%20cream%20cheese%20going%20before%20adding%20the%20powdered%20sugar.%3C/p%3E%3Cp%3EPlace%20one%20cake%20layer%20down%20and%20frost.%20Another%20layer%20down%20and%20frost%20that%20too.%3C/p%3E%3Cp%3EPlace%20the%20third%20layer%20on%20top%20and%20frost%20it.%20Frost%20the%20sides%20as%20well.%20Decorate%20with%20pecans%20if%20you'd%20like.%20They%20can%20be%20sprinkled%20over%20the%20top,%20pressed%20into%20the%20sides%20of%20the%20cake,%20or%20both.%20I%20think%20I%20would%20benefit%20from%20a%20cake%20decorating%20class.%3C/p%3E%3Cp%3EAnd%20a%20photography%20class.%20My%20birthday%20wish?%20A%20cup%20of%20coffee.%20And%20my%20street%20car%20replica%20back.%3C/p%3E){kind=link}
