Red, White, And Blueberry Cheesecake Pie

Ingredientes

  • 8 sht thawed phyllo dough
  • 1/4 c. butter or possibly margarine, melted
  • 2 x (8 oz) pkgs. cream cheese
  • 1/2 c. white sugar
  • 1 tsp vanilla extract
  • 2 x Large eggs
  • 2 c. fresh blueberries
  • 1/2 c. strawberry jelly
  • 1 c. whipped heavy cream

Direcciones

  1. Method:1. On a flat surface, place one sheet phyllo dough. Brush it with melted butter or possibly margarine, and cover with another piece of phyllo. Repeat till all 8 sheets are used. Using kitchen scissors, cut layered phyllo into a 12 to 13 inch circle. Carefully press circle into a greased 9 inch pie plate; gently fan edges. Bake at 425 degrees F (220 degrees C) till edges are just golden brown, 6 to 8 min; cold slightly on a wire rack.
  2. In a medium bowl, beat cream cheese, sugar, and vanilla with an electric mixer till light and fluffy. Beat in Large eggs till well combined. Mix in 1 c. of blueberries. Pour filling into prepared crust.
  3. Bake at 350 degrees F (175 degrees C) till set, 40 to 50 min. To prevent over browning of crust, gently cover pie with foil for the last 25 min of baking. Cold completely on a wire rack.
  4. In a small bowl, beat jelly till smooth; spread over cheese filling.
  5. Arrange 1 c. blueberries on top in a star pattern. Garnish with whipped cream.
  6. Makes 1 - 9 inch pie
  7. Recipe given to me for a 4th of July celebration. It has an unusual crust.
