Redneck Salsa

A simple recipe that is perfect for any casual get-together, especially when you have people snacking. It's a great way to incorporate black-eyed peas into your diet. You'll forget they're even there! Also, a great way to get children involved in the process of preparing food. There is some chopping involved but older children can handle those duties while the younger ones get to "dump" and mix the other ingredients. I make this year round but it's especially good during the summer when tomatoes are at their best. A crowd pleasure that doesn't last on the table long so be prepared to make more or double the recipe! Enjoy!

Ingredientes

  • 4 medium tomatoes, rough dice
  • 1/2 bunch cilantro. chopped (leaves only)
  • 6 green onions, chopped (green and white)
  • 1 can black-eyed peas, drained and washed
  • 8 oz. Zesty Italian dressing
  • 1 tsp garlic powder
  • Salt & pepper

Direcciones

  1. Combine all ingredients together, except salt. Wait until right before you're ready to start serving to add the salt, as it will immediately begin to pull the water out of the tomatoes. Serve with Scoops tortilla chips.
  2. Remember that recipes are never set in stone. Just basic templates for you to play with and make your own. All ingredients and quantities are subject to your own personal taste. I don't follow a recipe when making this. I just add until it tastes right to me. Hope you like it!
