A lot of our friends are watching their carbs these days. This little trick lets them enjoy tea sandwiches without the guilt of eating bread. This also works for our gluten-free friends.

- Wash cucumbers thoroughly. If desired, use a carrot peeler to peel decorative stripes in the cucumbers' skins.
- Slice the cucumbers into thick slices, 1-1 1/4 inches thick.
- With a melon baller, carefully carve a cup into each slice.
- Fill with desired filling and serve.
