Every dollar store is different, and not all of them may carry these ingredients. If you do not want this casserole to be spicy, omit the jalapenos and use plain diced tomatoes instead of the diced tomatoes with green chilies.

  • 2 cans (15.5 ounces) red beans, drained and rinsed well
  • 1 can (15 ounces) sweet corn, drained and rinsed well
  • 1 can (13.5 ounces) hominy, drained and rinsed well
  • 2 cans (10 ounces) diced tomatoes and green chilies
  • 1 can (12 ounces) green pickled jalapeno peppers, drained and diced 1 jar (12 ounces) roasted red peppers, drained and diced
  • Garlic powder, to taste
  • Chili powder, to taste
  • Dried chopped onion, to taste
  • Paprika, to taste
  • Italian seasoning blend, to taste
  • Black pepper, to taste
  • cumin, to taste (optional)

  3. Pre-heat your oven to 375 degrees F.
  4. In a large bowl, combine the beans, corn, hominy, diced tomato mixture, diced jalapenos and diced red peppers. Season mixture to taste, being sure to thoroughly integrate the spices into the mixture.Pour the mixture into two 9x9-inch casserole dishes that have been sprayed with cooking spray. Place in the oven and bake for about 20 minutes, or until everything is completely warmed through.
