Ingredientes

  • 500 gm short pastry
  • 1 x Large eggs
  • 200 gm rhubarb
  • 3 x apples, Granny Smith
  • 1/2 Tbsp. lemon, juice of
  • 1/2 c. sugar (caster)
  • 1/4 c. almonds, grnd
  • 1/2 c. fresh breadcrumbs
  • 1/4 tsp cinnamon, grnd
  • 1/2 c. saltanas

Direcciones

  1. Peel, core and slice the apples.
  2. Slice the rhubarb.
  3. Combine filling ingredients and mix well.
  4. Roll out half the pastry to a thickness of about 1/2 cm and line a 25 cm pie dish, leaving some pastry overlapping the sides. Place in filling, mounding in the center. Brush edges of pastry with beaten egg.
  5. Roll out remaining pastry and lay over to cover. Healthy pinch edges together to seal. Glaze with beaten egg and decorate with left over strips of pastry. Make a small slit in the top to allow steam to escape.
  6. Bake for about 40 min at 180C/360F till pastry is golden.
  7. Everyones favourite.
