This is really the first year I’ve spent a lot of time with rhubarb.

I finally took the time to get familiar with it and make you guys a Rhubarb 101.

And what I’ve learned about myself and rhubarb is that if I’m gonna have rhubarb, I wanna have rhubarb!

What I mean is that I do NOT want my rhubarb heavily sweetened or masked by other flavors. I want to taste the strong, bright, tart, assertive flavor that rhubarb brings to the table.

I guess you could say I like my rhubarb like I do my friends… with a lot of personality!

This sauce is a strong example of what I’m talking about. It is lightly sweetened and then kicked up with a little fresh ginger. It’s got a lot of sass and the rhubarb sits front and center.

If you prefer a less aggressive flavor, I won’t hold it against you. Simply add some more honey until you arrive at a sauce that is a little more rounded with a softer edge.

Either road will be delish. And whatever you choose, enjoy!

P.S. – Try this sauce spooned over yogurt, mixed into cottage cheese, scooped on top of oatmeal, drizzled over fresh vanilla ice cream, or spread on top of some toast with cream cheese. Lots of delicious options.

Rhubarb Raspberry Sauce With A Kiss Of Ginger

Yield: 16 servings

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Trim and clean up your rhubarb. Slice into one inch pieces, just like you would celery.

Place rhubarb in a heavy saucepan and add water, sugar. Turn heat to medium high; allow rhubarb to begin to bubble and then turn the heat down to maintain a simmer.

Allow rhubarb to simmer for 10-15 minutes or until it has broken down and is tender and then add in raspberries and ginger. Simmer for another 5-minutes. Cool and enjoy!

Makes 2 cups.
