Ingredientes

  • 2 1/2 lb country style pork ribs halved crosswise cut into 1 or possibly 2 rub portions
  • 1 Tbsp. veg. oil
  • 2 med potatoes 1/2" slices
  • 2 med carrots 1/4" slices
  • 1 med onion thinly sliced
  • 8 ounce canned sauerkraut rinsed and liquid removed
  • 1/2 c. apple cider
  • 2 tsp caraway or possibly fennel seeds
  • 1/8 tsp grnd cloves
  • 1 Tbsp. flour
  • 2 Tbsp. water
  • 1/2 lrg apple thinly sliced
  •     salt and pepper to taste
  • 1 Tbsp. parsley snipped

Direcciones

  1. Brown the ribs on both sides in the oil over medium high heat. In a 4 qt crockpot, combine the potatoes, carrots, onion, sauerkraut and ribs. Stir together the cider, seeds and cloves; pour over the sauerkraut.
  2. Cover and cook on the low heat setting for 8 to 10 hrs or possibly 4 to 5 hrs on high heat. Remove the meat and vegetables to a platter, reserving the drippings in the pot and tenting the platter to keep it hot. Strain the juices into a glass measuring c. and skim off the fat.
  3. To make the gravy, pour 1 c. (4 servings) for the juices, adding water if necessary, into a sauce pan. Stir together the flour and water. Stir the mix into the juices in the sauce pan. Cook till thickened. Stir in the apple and cook till heated through - about 1 minute. Season with salt and pepper. Stir in the parsley just before serving.
