.%3C/p%3E%3Cp%3EYou%20know%20me,%20I%20always%20give%20you%20my%20honest%20opinion,%20so%20I%20have%20to%20be%20straight%20with%20you%20once%20again%20and%20say%20that%20when%20I%20first%20started%20cooking%20up%20this%20recipe%20I%20was%20a%20little%20skeptical%20that%20I%20would%20like%20the%20final%20results.%20It%20all%20seemed%20too%20easy!%20I%20didn't%20believe%20that%20a%20curry%20recipe%20so%20simple%20and%20with%20so%20few%20ingredients%20could%20actually%20have%20that%20hit%20of%20flavour%20that%20I%20yearn%20for%20when%20diving%20into%20a%20dish%20of%20curry.%20I%20was%20completely%20shocked%20to%20find%20that%20after%20I%20allowed%20the%20coconut%20milk%20to%20simmer%20and%20blend%20with%20the%20spices,%20chicken,%20and%20vegetables%20I%20was%20left%20with%20the%20type%20of%20wonderfully%20flavourful%20curry%20that%20I%20had%20hoped%20for!%20Though%20the%20curry%20was%20already%20delicious%20on%20its%20own,%20especially%20when%20topping%20fluffy%20basmati%20rice,%20I%20wanted%20to%20round%20out%20the%20flavours%20just%20a%20touch.%20In%20order%20to%20do%20so,%20I%20added%20a%20few%20drops%20of%20fish%20sauce%20and%20about%201%20tsp%20of%20tomato%20paste,%20which%20I%20happened%20to%20have%20on%20hand%20in%20my%20fridge.%20That%20little%20bit%20of%20umami%20and%20acidity%20took%20the%20dish%20up%20a%20level,%20helping%20to%20balance%20out%20the%20flavours%20and%20contribute%20to%20the%20overall%20mouth-feel%20of%20the%20dish.%3C/p%3E%3Cp%3EThough%20I%20may%20have%20been%20skeptical%20at%20first%20based%20on%20how%20easy%20the%20recipe%20was,%20I%20was%20so%20pleasantly%20surprised%20at%20how%20successful%20this%20dish%20turned%20out!%20I%20was%20able%20to%20get%20everything%20prepped,%20cooked,%20and%20on%20the%20table%20in%20just%20over%20a%20half%20hour%20and%20still%20had%20leftovers%20for%20lunch%20the%20next%20day!%20I%20would%20highly%20recommend%20this%20recipe%20to%20any%20curry%20lover%20looking%20for%20a%20quick%20and%20simple%20weeknight%20dinner%20idea!%20Thanks%20to%20the%20big%20flavours%20in%20this%20dish%20and%20the%20ease%20of%20preparation,%20this%20is%20a%20fantastic%20option%20for%20serving%20to%20guests%20to%20both%20wow%20them%20and%20allow%20you%20time%20to%20enjoy%20yourself%20as%20well!%3C/p%3E%3Cp%3EFind%20the%20recipe%20here!%3C/p%3E){kind=link}
