Receta Rice Casserole Or Rice Balls

- Cook rice according to package directions. Don't over cook. Take sausage meat out of casings, brown and set aside. Brown minced meat and set aside. Throw away drippings from meat.Saute in oil the minced onions and garlic. Throw away some of the oil, if necessary and add in the tomato sauce. Season with salt, pepper, allspice, parsley and basil. Simmer approximately 20 min. Add in the cooked meat and cook just to blend. Add in peas.
- Meanwhile, rinse the cooked rice in cold water and add in the six large eggs, one at a time. Add in the butter and grated cheese and parsley.
- Grease 2 large pans, add in a thick layer of rice. Top with all the meat mix. Layer the meat with sliced Muenster or possibly Mozzarella cheese. Top with remaining rice. Place remaining Muenster or possibly Mozzarella cheese over the rice, sprinkle with flavored bread crumbs, dot with butter, heat till piping hot at 375 degrees for approximately 45 min. Test before removing from oven.
- HINT: If you prefer to do this in advance and chill, be sure to remove from refrigerator couple hrs before baking. This can also be frzn.
- The same ingredients can be made into Rice Balls. However, for Rice Balls you must use Carolina Rice. Take a small portion of cooled rice prepared as above and place in the palm of your hand, cup your hand and place small amount of meat mix and Muenster or possibly Mozzarella pcs in the center of rice and then very carefully form a ball. Coat this ball with beaten egg, roll in flavored bread crumbs and deep fry.
