Ingredientes

  • 1 Tbsp. Oil
  • 2 c. Uncooked basmati rice
  • 1/4 c. Minced onion
  • 2 x Cloves garlic, chopped
  • 4 c. Low-salt chicken broth
  • 1/2 tsp Salt
  • 1 c. Finely minced carrot
  • 1/2 c. Minced green onions
  • 3 Tbsp. Pine nuts, toasted

Direcciones

  1. Heat oil in a medium saucepan over medium-high heat. Add in rice and onion; saute/fry 2 min. Add in the garlic; saute/fry 1 minute. Add in broth and salt; bring to a boil. Cover, reduce heat, and simmer 7 min. Stir in carrot; cover and cook an additional 7 min or possibly till liquid is absorbed.
  2. Remove from heat; stir in remaining ingredients. Let stand, covered, 5 min; fluff with fork.
  3. Yield: 7 servings (serving size: 1 c.).
