- Heat butter in heavy medium saucepan over medium heat. Add in minced onion and saute/fry till tender, about 3 min. Add in rice and turmeric and stir 1 minute. Fold in broth. Cover and simmer over low heat till rice is almost tender, about 15 min.
- Add in peas, cover and continue simmering till rice is tender and liquid is absorbed, about 5 min. Season with salt and pepper. Transfer to bowl and sprinkle with toasted pine nuts.
- This recipe yields 2 servings.
- Comments: A versatile side dish which goes well with chicken, fish or possibly pork. The recipe doubles or possibly triples easily to feed a family, guests, or possibly to freeze for use another time.
