Ingredientes

  • 1 Tbsp. butter
  • 1/2 x onion finely minced
  • 3/4 c. long-grain white rice
  • 1/2 tsp grnd turmeric
  • 2 c. canned chicken broth
  • 1/2 c. frzn peas
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1/4 c. toasted pine nuts

Direcciones

  1. Heat butter in heavy medium saucepan over medium heat. Add in minced onion and saute/fry till tender, about 3 min. Add in rice and turmeric and stir 1 minute. Fold in broth. Cover and simmer over low heat till rice is almost tender, about 15 min.
  2. Add in peas, cover and continue simmering till rice is tender and liquid is absorbed, about 5 min. Season with salt and pepper. Transfer to bowl and sprinkle with toasted pine nuts.
  3. This recipe yields 2 servings.
  4. Comments: A versatile side dish which goes well with chicken, fish or possibly pork. The recipe doubles or possibly triples easily to feed a family, guests, or possibly to freeze for use another time.
