Ring in the New Year Champagne Cocktail

Dying here a little bit but then again, I’ve been dying all week and absolutely, positively forgot to check this last night in my Tylenol Cold and Flu medicine stupor. The sugared cranberries are made, the cocktail WILL be done…please come back a bit later. I might be sick but right about now I think I need a drink. :)
Double Platinum Champagne Cocktail
Ingredients
- For the simple syrup and sugared cranberries:
- 1/4 cup cranberries
- 1/2 cup water
- 1/2 cup sugar
- For the cocktail:
- 10-12 cooked cranberries
- 2 oz cranberry simple syrup
- 1.5 oz lemon juice
- 1 oz vodka
- 1/2 tsp fresh orange juice
- Champagne or Sparkling wine
Sugared cranberries for garnish.
Preparation
To make the cranberry simple syrup and sugared cranberries for garnish:
Combine the water and sugar in a small pan. Cook until the sugar has dissolved and then add the cranberries and cook on medium low heat until some of the cranberry skins just start to pop and water starts to turn pink; 2-3 minutes. Remove from heat.
Drain cranberries in a colander over a bowl and reserve the syrup and half of the cranberries for the cocktail. Place sanding sugar on a cookie sheet and gently put the remaining cranberries on the sugar and roll them until coated. Let them stand in a single layer at room temperature until dry, about 1 hour.
To Make the Cocktail:
In a cocktail shaker, muddle the berries with the simple syrup and lemon juice. Add the vodka and orange juice and top with ice. Shake vigorously and strain into champagne flute. Top with champagne and garnish with sugared cranberries.
Notes
Do not refrigerate the sugared cranberries; putting them in the refrigerator may ruin the hard shell of the sugar. Use immediately.
