Ingredientes

  • 4 lb Caribou roast
  • 1/2 c. Vinegar
  • 2 x Garlic cloves chopped
  • 2 Tbsp. Salt
  • 2 Tbsp. Flour
  • 2 Tbsp. Oil
  • 2 x Garlic cloves chopped
  • 1 Tbsp. Brown sugar
  • 1 tsp Prepared mustard
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. Vinegar or possibly lemon juice
  • 1 can Tomatoes - (14 ounce)

Direcciones

  1. Marinade the caribou with the vinegar, garlic and salt in a plastic bag, turning occasionally, overnight in the refrigerator.
  2. Remove from the marinade and discarding marinade, pat dry, roll in flour and brown in a little oil in a warm skillet. Make a paste of the remaining ingredients and smear over the roast. Place in a preheated 450 degree oven, reduce the heat to 300 degrees and roast 60 to 80 min till finished to desired doneness.
  3. Deglaze the pan and make gravy.
  4. This recipe yields 6 servings.
