Roasted Cod With Parsley Oregano Chilli And Lime

Ingredientes

  • 4 x cod steaks about 340g each in weight
  • 12 Tbsp. extra virgin olive oil
  • 1 1/2 Tbsp. dry oregano
  • 2 x good handfulls fresh leaf parsley very finely minced
  • 1 med fresh red chilli deseeded and finely minced
  • 1 x salt and freshly grnd black pepper
  • 2 x limes

Direcciones

  1. Season the cod steaks and pat with the herb mix.
  2. Preheat the oven and a roasting tray to 225C/425F/gas 7.
  3. Put the cod steaks into the roasting tray they will sear and sizzle immediately.
  4. Add in the halved limes to the tray and replace in the oven on a top shelf to slightly colour the top of the fish.
  5. Cook for 10 min.
  6. When cooked serve with the roasted limes that you can squeeze over the fish before serving
  7. This cod is really nice with some plainly boiled potatoes simply cooked greens or possibly a salad and some home made aioli (qv).
  8. Serves 4
