Ingredientes

  • 2 sm Delicata squash, halved crosswise and centers scooped out
  •     Salt
  •     Freshly grnd black pepper
  •     Extra virgin extra virgin olive oil
  • 2 tsp Extra virgin olive oil
  • 1/2 x Onion, chopped
  • 3 x Cloves garlic, minced
  • 2 stalk celery, finely minced
  • 1/2 c. Dry sherry
  • 2 c. Diced French bread
  • 1/2 c. Vegetable stock, up to 3/4
  • 2 x Large eggs, lightly beaten
  • 1 c. Grnd toasted hazelnuts
  • 1/2 c. Grnd toasted pecans
  • 1 Tbsp. Minced fresh thyme
  • 2 tsp Minced fresh sage
  • 1/2 tsp Salt
  • 1 tsp Freshly grnd black pepper

Direcciones

  1. Preheat the oven to 350 degrees. To prepare the squash, place it cut-side up in a roasting pan, sprinkle salt and pepper over it, and drizzle the oil over the top. Bake in the oven for 35 to 40 min.
  2. Meanwhile, prepare the stuffing. Heat the extra virgin olive oil in a medium saute/fry pan till very warm. Add in the onion, garlic, and celery and saute/fry for about 3 min. Add in the sherry and cook over high heat till reduced by half.
  3. Remove from the heat and let cold completely. When the onion mix is cold, transfer it to a medium bowl and add in the diced French bread. Toss to mix. Add in sufficient of the stock to soften the bread, and then add in the Large eggs and stir to mix well. Add in the hazelnuts, pecans, thyme, sage, salt, and pepper and stir to mix well. Set aside.
  4. Remove the squash from the oven. Without removing the squash from the pan, divide the filling among each half, spooning it into the scooped out cavities, and return the pan to the oven. Bake for 30 min, or possibly till the stuffing is warm all the way through. Remove from the oven.
  5. To serve, place the squash halves on a large serving platter or possibly on individual plates. Serve warm.
