When I was a little girl I loved family get togethers. I remember parties, summer barbecues and lots of music as vividly as if they just happened. Not much has changed, my family still loves the parties, the barbecues and of course the music. The onset of warmth reminds me that the endless celebrations of summer are just beginning and the delicious food that comes along will be plentiful. The grills are working in overtime mode these days and the neighbors probably know the entire song playlist by heart. I remember being a small child visiting the tiny summer house in the mountains and crawling through the vegetable gardens my grandpa planted. I remember my dad in his very 80’s jump suit building a brick “pit” to make pork and chicken kabobs. My mom and my aunt making salads with veggies right from the garden. And music playing as loud as the stereo allowed. Back then the music didn’t come from Ipods instead it was a small tape with songs recorded right of the radio. Things were simple, uncomplicated and carefree. There was an amazing rustic feeling to all of that, the feeling that is still with me all these years later. This weekend we did just that, a family barbecue to celebrate my aunt’s birthday. The season of birthdays is in full swing and my sister is about to add another birthday to the mix. I can’t contain my excitement, but in a matter of days I will be an aunt. I leave you with these delicious Roasted Golden Beets & Kale that you simply must make to understand how good they are. Golden beets unlike regular beets are different in flavor. They are delicious, especially when roasted with lots of garlic and parsley. Even my 6 year old ate them. She even asked for seconds. 3 golden beets, scrubbed, peeled and cut into cubes 2 garlic cloves, minced 2 tbsp fresh parsley, chopped salt to taste olive oil 4 kale leaves, stems removed, leaves roughly chopped into 1½ inch strips ¼ cup goat cheese crumbles Instructions

Preheat over to 400 degrees. In a small baking dish combine cubed beets, garlic, parsley, olive oil and salt to taste. Cover with aluminum foil. Bake for 30 min. Stir in kale, cover again and bake another 10 min. To serve, top with goat cheese. 3.2.2708
