How do you roast a jalapeño pepper?

It's actually quite easy and the same process applies to any pepper you want to roast.

• Cut the pepper in half, remove seeds and toss in a tsp or two of oil (any oil will do)

• Broil it in an oven or toaster oven (cut-side down) until the skin begins to blacken

• Put the blackened peppers in a bowl and cover with plastic wrap

That last step may seem kind of odd but it allows the blackened skin on the pepper to loosen so you can easily peel it off.

Time it takes: 10 minutes to roast and cool, 10 minutes to prepare

In a medium bowl, toss cut peppers with oil. Place peppers cut-side down on a baking sheet that's been covered with foil wrap. Broil in the oven (or toaster oven) until skins are blistered and charred, about 5 minutes. Remove peppers from oven, place in a bowl, cover with plastic wrap and let stand for 5 minutes. Peel off charred skins and dice peppers.

In a small bowl, combine diced peppers, mangoes, onions, lime juice and olive oil. Lightly season with salt and pepper. Garnish with cilantro and serve with tortilla chips.
