%20but%20that's%20not%20the%20main%20reason%20I%20end%20up%20there%20every%20day.%20The%20main%20reason%20is%20PEACHES.%3C/p%3E%3Cp%3EIs%20that%20a%20weird%20reason%20to%20go%20to%20a%20coffee%20shop?%20Whatever.%3C/p%3E%3Cp%3EEvery%20day%20Jubala%20posts%20special%20toppings%20for%20their%20house-made%20biscuits%20and%20liege%20waffles,%20and%20lately%20it's%20been%20peaches,%20peaches,%20peaches.%20So%20I%20just%20come%20in%20every%20day%20and%20give%20them%20all%20my%20money.%20Go%20check%20out%20my%20Instagram%20feed%20if%20you%20want%20to%20heckle%20me%20about%20how%20much%20peach%20jam%20I%20have%20consumed.%3C/p%3E%3Cp%3EI%20usually%20avoid%20creating%20my%20own%20fresh%20peach%20recipes,%20however,%20because%20peeling%20peaches%20is%20the%20WORST.%20The%20absolute%20worst.%20You'll%20always%20get%20that%20one%20jerk%20peach%20%E2%80%94%20no%20matter%20how%20many%20times%20you%20blanch%20it%20and%20ice-water%20bathe%20it%20and%20paring%20knife%20it%20and%20throw%20it%20against%20the%20wall%20and%20stick%20it%20in%20the%20blender%20and%20set%20it%20on%20fire,%20the%20peel%20will%20only%20come%20off%20in%20microscopic%20pieces%20that%20bring%20half%20the%20peach%20flesh%20along%20with%20them.%20But%20I%20figured%20it%20out%20this%20time!%20I%20followed%20this%20method%20exactly%20and%20I%20BOUGHT%20EXTRA%20PEACHES.%20So%20when%20I%20got%20to%20a%20jerk%20peach,%20I%20just%20fed%20it%20to%20my%20husband%20and%20moved%20on%20to%20kinder,%20gentler%20peaches.%20Hey,%20it%20worked%20for%20me!%20And%20I'm%20so%20glad,%20because%20this%20sweet%20treat%20was%20a%20highlight%20of%20the%20party%20menu.%3C/p%3E%3Cp%3EThis%20Roasted%20Peaches%20and%20Shortbread%20Ice%20Cream%20Sundae%20is%20the%20perfect%20summer%20dessert%20and%20worth%20every%20bit%20of%20peach%20peeling.%20The%20roasted%20cinnamon-sugar%20peaches%20get%20soft%20and%20slightly%20caramelized%20under%20the%20broiler%20and%20give%20off%20this%20rich%20SYRUP,%20oh%20my%20gosh.%20The%20shortbread%20crumbles%20are%20tender%20and%20buttery.%20All%20of%20this%20on%20top%20of%20vanilla%20bean%20ice%20cream%20on%20the%20patio%20--%20especially%20after%20a%20long%20day%20of%20swimming%20and%20playing%20in%20the%20sunshine%20--%20is%20really%20what%20summer%20is%20all%20about.%20Enjoy!%3C/p%3E%3Cp%3Efrom%20patio%20to%20pool!%3C/p%3E%3Cp%3EFour%20years%20ago:%20Elementary%20School%20Reunion%20Picnic!%3C/p%3E%3Cp%3EFive%20years%20ago:%20Secret%20Garden%20Picnic!%3C/p%3E%3Cp%3ESix%20years%20ago:%20Red%20Velvet%20Cupcakes%20with%20Cream%20Cheese%20Frosting%3C/p%3E%3Cp%3ERoasted%20Peaches%20and%20Shortbread%20Ice%20Cream%20Sundae%3C/p%3E%3Cp%3E1%20cup%20all-purpose%20flour%201/4%20cup%20powdered%20sugar%20pinch%20of%20salt%201/2%20cup%20butter%208%20peaches,%20peeled%20and%20quartered%206%20tablespoons%20butter,%20melted%206%20tablespoons%20sugar%201/2%20teaspoon%20cinnamon%3C/p%3E%3Cp%3EMake%20the%20shortbread.%20Preheat%20your%20oven%20to%20350%20degrees%20F.%20Line%20an%208-inch%20square%20baking%20pan%20with%20a%20foil%20sling.%20Process%20the%20flour,%20powdered%20sugar,%20and%20salt%20together%20for%20a%20few%20seconds%20before%20adding%20in%20the%20chunks%20of%20cold%20butter.%20Cut%20the%20butter%20into%20the%20flour%20mixture%20with%20about%206-8%20pulses%20or%20until%20it%20looks%20like%20small%20peas.%20Press%20the%20mixture%20into%20the%20baking%20dish%20with%20the%20flat%20bottom%20of%20a%20glass%20or%20small%20dish.%20Bake%20for%2020%20minutes%20or%20until%20very%20lightly%20browning.%20Let%20cool%20completely%20on%20a%20wire%20rack.%20I%20remove%20my%20shortbread%20(using%20the%20sling)%20from%20the%20pan%20after%20just%20a%20few%20minutes%20to%20let%20it%20cool%20the%20rest%20of%20the%20way.%20When%20the%20shortbread%20is%20completely%20cool,%20break%20it%20into%20hunks.%20Roast%20your%20peaches:%20Line%20two%20baking%20sheets%20with%20foil%20sprayed%20with%20cooking%20spray.%20Arrange%20the%20peach%20quarters%20in%20a%20single%20layer%20(I%20separated%20mine%20so%20they%20weren't%20touching)%20on%20both%20baking%20sheets.%20Brush%20them%20well%20with%20melted%20butter.%20Mix%20the%20cinnamon%20and%20sugar%20together.%20Sprinkle%20all%20of%20the%20sugar/cinnamon%20mixture%20over%20the%20peaches%20(I%20even%20turned%20them%20and%20sprinkled%20it%20on%20their%20undersides).%20Broil%20the%20peach%20quarters%20about%205%20inches%20from%20the%20heating%20unit,%20turning%20once,%20for%20about%2010%20minutes%20or%20until%20nicely%20caramelized.%20Assemble:%20Top%20vanilla%20bean%20ice%20cream%20with%20roasted%20peaches,%20syrup,%20and%20shortbread%20crumble.%20Enjoy!%20%203.2.2925%3C/p%3E){kind=link}
