Roasted Sweet Pepper Flatbread Pizza Author: Marlene Baird Prep time: Cook time: Total time: Save Print Ingredients 1 prepackaged Flatbread pizza such as Brooklyn Bred brand 3 sweet mini peppers that have already been roasted 3 to four buffalo mozzarella slices 1 Tablespoon Avocado Oil (can use olive oil too) 2 Tablespoons grated Parmesan cheese ⅛ teaspoon red pepper flakes 1 handful baby spinach leafs Directions Preheat oven to 425 degrees F (for crispy pizza) Brush the flatbread with the oil Sprinkle the Parmesan cheese on top. I always find it interesting where my inspiration for cooking comes from. This flatbread pizza was inspired by my visit to Kenwood California. I had the opportunity to participate in the Landmark Vineyards annual Pig, Pizza, and Pinot event.
The Landmark Winery property is breathtaking. You have this absolutely incredible view of the Mayacamas Mountains as your backdrop. And what can be better than a festival that features whole roasted pig, unique pizza combinations, the taste of Pinot and the beautiful Sonoma County weather.
You guys, I could not believe my eyes when they brought out this whole roasted pig.
The hubby and I went with my blogger friend Jennifer and her husband Wally. Anytime Jennifer and I get together, we know we are going to have a great time. We can snap pics and ooh and aah about all the food without being judged. We even had an adventurous bee that decided to get drunk and land in Jennifer’s glass of Chardonnay.
So back to this pizza. You know I am all for quick and easy, right? While at the grocery store the day after our trip to Kenwood, I spotted this prepackaged flatbread pizza and figured, why not give it a try. Now I needed to decide what to put on the pizza. I grabbed the buffalo mozzarella, some sweet mini peppers and baby spinach and said that’s it. This will be Monday evening’s dinner.
If you are wondering what buffalo mozzarella is, it is a mozzarella made from the milk of the domestic Italian water buffalo. It is a product traditionally produced in Campania, especially in the provinces of Caserta and Salerno.
Oh crap, I just realized that this flatbread would taste fantastic with burrata too.
That means another trip to the store for some burrata.
