- The tomatillo sauce:
- 8 to 9 medium tomatillos, husked and rinsed
- 1 jalapeno pepper, stemmed
- 3 garlic cloves, unpeeled
- 4 tsp olive oil, divided
- 1/2 large white onion, cut into 1/4-inch dice
- 1 1/2 cups chicken broth
- The slaw:
- 2 cups thinly sliced red cabbage
- 1/4 cup chopped cilantro
- 2 tsp fresh lime juice
- 2 tsp honey
- Pinch of kosher salt
- 8 corn tortillas
- The shrimp:
- 24 large shrimp, peeled and deveined
- 1/4 cup canola oil
- 3/4 tsp ground coriander
- 3/4 tsp ground cumin
- 1 tsp chile powder
- 1/2 tsp kosher salt
- 3/4 cup crumbled cotija cheese (can substitute feta cheese)
