%20a%20summer%20intensive%20course%20in%20first-year%20Japanese,%20and%20it%E2%80%99s%20led%20to%20something%20of%20a%20rude%20awakening:%20waking%20up%20early%20five%20days%20a%20week%20is%20exhausting!%3C/p%3E%3Cp%3E(Don%E2%80%99t%20laugh%20%E2%80%94%20after%20seven%20years%20of%20grad%20school,%20I%20have%20a%20lot%20to%20re-get%20used%20to%E2%80%A6)%20The%20sad%20part%20is%20that%20Paula%20still%20wakes%20up%20earlier%20than%20I%20do%20and%20leaves%20the%20house%20before%20me%E2%80%A6%20so%20obviously%20I%20have%20nothing%20to%20complain%20about.%3C/p%3E%3Cp%3ESince%20I%20can%E2%80%99t%20just%20sleep%20in%20or%20be%20home%20at%20odd%20hours%20during%20the%20weekdays%20anymore,%20Paula%20and%20I%20have%20kicked%20our%20weekend%20cooking%20into%20high%20gear:%20she%20makes%20us%20sandwich%20bread%20and%20a%20frittata%20to%20last%20all%20week%20for%20breakfasts,%20and%20for%20our%20lunches,%20I%20make%20tabbouleh-like%20hearty%20salads%20and%20gazpacho%20soup.%3C/p%3E%3Cp%3EBut%20not%20like%20the%20gazpacho%20soup%20that%20I%20used%20to%20make%20(which,%20granted,%20is%20quicker,%20since%20you%20can%20make%20it%20with%20either%20fresh%20tomatoes%20or%20a%20large%20can%20of%20tomato%20juice).%20Since%20I%20first%20posted%20that%20recipe,%20the%20kind%20of%20gazpacho%20that%20has%20won%20my%20heart%20even%20more%20is%20made%20with%20oven-roasted%20tomatoes.%3C/p%3E%3Cp%3EFor%20this%20soup,%20I%20like%20to%20roast%20ripe,%20de-seeded%20roma%20tomatoes%20along%20with%20some%20onion,%20garlic,%20and%20a%20serrano.%20You%20can%20always%20skip%20the%20serrano%20and%20just%20add%20a%20dash%20of%20chili%20powder%20(or%20Sriracha)%20to%20spice%20up%20your%20gazpacho%20instead.%20The%20onions%20and%20garlic%20don%E2%80%99t%20necessarily%20need%20to%20be%20roasted%20(I%20use%20them%20raw%20in%20my%20other%20gazpacho%20recipe),%20but%20as%20long%20as%20they%20fit%20on%20my%20roasting%20pan%20/%20baking%20sheet,%20then%20they%E2%80%99re%20going%20into%20the%20oven,%20too!%3C/p%3E%3Cp%3ERoasted%20tomatoes%20are%20the%20most%20important%20element.%20They%20give%20the%20soup%20a%20more%20intense%20flavor%20(especially%20if%20your%20tomatoes%20aren%E2%80%99t%20quite%20at%20the%20peak%20of%20their%20season%20yet!).%20But%20roasting%20them,%20with%20olive%20oil%20and%20sea%20salt,%20also%20mellows%20their%20acidity%20a%20bit%20and%20almost%20seems%20to%20make%20them%20sweeter.%20Of%20course%20the%20sweetness%20is%20then%20counterbalanced%20by%20the%20vinegar/lime%20juice%20and%20the%20hint%20of%20spice.%3C/p%3E%3Cp%3EAnd%20don%E2%80%99t%20feel%20you%20need%20to%20limit%20things%20to%20just%20roma%20tomatoes%20either!%20I%20usually%20use%20romas%20for%20this%20recipe,%20since%20they%E2%80%99re%20easier%20to%20scoop%20the%20seeds%20out%20of%20compared%20to%20their%20rounder,%20squatter%20relatives.%20You%20do,%20however,%20need%20ripe,%20red%20flavorful%20tomatoes%20%E2%80%94%20nothing%20pale%20red%20and%20barely%20ripe%20or%20out%20of%20season.%20Yes,%20this%20recipe%20calls%20for%20turning%20on%20the%20oven,%20but%20this%20is%20decidedly%20a%20Summer%20Soup.%20(And%20not%20just%20because%20it%E2%80%99s%20eaten%20chilled.)%3C/p%3E%3Cp%3EThis%20gazpacho%20is%20less%20sharply%20vinegary%20than%20my%20previous%20version,%20so%20it%20doesn%E2%80%99t%20need%20to%20rely%20on%20a%20buttery%20garnish%20of%20avocado%20wedges%20to%20cut%20through%20the%20acidity.%20Instead,%20it%20relies%20on%20cucumber,%20blended%20into%20the%20soup,%20to%20thin%20out%20the%20broth%20and%20to%20stretch%20it%20across%20more%20servings.%3C/p%3E%3Cp%3EThe%20cucumber%20is%20especially%20nice%20if%20your%20tomatoes%20aren%E2%80%99t%20the%20juiciest%20%E2%80%94%20and%20because%20you%20will%20have%20de-seeded%20and%20discarded%20their%20gloppiest%20parts.%20(Although%20I%20like%20to%20strain%20out%20the%20%E2%80%9Ctomato%20water%E2%80%9D%20from%20the%20seeds%20and%20add%20it%20back%20to%20the%20soup.)%3C/p%3E%3Cp%3EPaired%20with%20the%20intense%20concentrated%20flavor%20of%20roasted%20tomatoes,%20the%20cucumber%20makes%20this%20summery%20soup%20all%20the%20more%20refreshing.%20Perfect%20for%20a%20fresh,%20cold,%20and%20reinvigorating%20lunch%20on%20a%20hot%20July%20afternoon%20(or%20for%20a%20lunch%20quickly%20slurped%20up%20in%20between%20teaching%20and%20office%20hours).%3C/p%3E%3Cp%3E(I%20also%20like%20to%20let%20guests%20serve%20themselves%20gazpacho%20out%20of%20a%20pitcher%20%E2%80%94%20it%E2%80%99s%20a%20great%20addition%20to%20a%20buffet%20table%20at%20a%20tapas%20party!)%3C/p%3E%3Cp%3ERECIPE:%3C/p%3E%3Cp%3ERoasted%20Tomato%20Gazpacho%3C/p%3E%3Cp%3E(Serves%206)%3C/p%3E%3Cp%3EActive%20time:%2025%20min.;%20Total%20time:%201%20hour.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EHow%20to%20make%20it:%3C/p%3E%3Cp%3E1.%20Pre-heat%20the%20oven%20to%20400%20degrees.%20Slice%20off%20the%20tops%20of%20the%20roma%20tomatoes,%20then%20halve%20the%20tomatoes%20and%20use%20your%20thumb%20to%20scoop%20out%20the%20seeds%20and%20liquid,%20reserving%20them%20in%20a%20bowl.%
