Ingredientes

  • 2 tbsp olive oil
  • 1 Cup finely diced onions
  • 1 cup finely diced celery including leaves
  • 1/2 cup finely diced carrot
  • 1 clove garlic minced
  • 1 tbsp finely chopped fresh sage
  • 2 tsp finely chopped fresh thyme
  • 1 cup dried cranberries chopped up
  • 1/4 c dry vermouth or water
  • 5 large eggs
  • 3 cups milk
  • 1 tsp dijon mustard
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 cups cubed dry old bread, best if it's different varieties
  • 3 cups cubed cooked turkey
  • 2 1/2 cups swiss cheese or any combination of anything you have around

Direcciones

  1. Preheat oven to 350, grease a 9 inch springform pan and place on a baking sheet
  2. heat the oil in a fry pan add the onion celery and carrot. saute until the onions are translucent about 5 minutes. this is a good place to use any leftover veg from turkey day.
  3. Add the garlic and herbs and saute 1 minute more. Add the cranberries vermouth and simmer until almost all the liquid has evaporated. remove from heat and cool to room temp.
  4. While the veg are cooling, whisk the eggs and then whisk in milk mustard salt and pepper. Add bread cubes, toss to coat and let soak for 15 min stirring occasionally.
  5. Stir the cooled veg and diced turkey into the bread mixture and then stir in the 2 cups cheese. spoon mixture into the prepared springform pan and sprinkle with remainiong cheese.
  6. Bake for 1 hour until the top is a rich golden brown and center springs bak when pressed. Let rest for 15 minutes before unmolding to serve
