%20and%20I%20couldn%E2%80%99t%20stop%20thinking%20about%20a%20ravioli%20recipe%20I%E2%80%99d%20clipped.%20I%E2%80%99d%20bought%20the%20semolina%20flour%20weeks%20ago%20in%20anticipation%20of%20making%20pasta%20again%20and%20finally,%20I%20decided%20I%20could%20wait%20no%20more.%20Plus,%20I%20had%20some%20ricotta%20cheese%20on%20the%20verge%20of%20ruin,%20so%20the%20ingredients%20were%20there%20waiting%20for%20me.%3C/p%3E%3Cp%3EIt%E2%80%99s%20actually%20a%20fun%20little%20process,%20this%20making%20ravioli%20thing.%20But%20then%20again,%20I%20get%20all%20sorts%20of%20excited%20about%20making%20things%20from%20scratch,%20so%20this%20is%20no%20surprise,%20right?%20I%20can%E2%80%99t%20put%20my%20finger%20on%20it,%20but%20a%20certain%20feeling%20of%20pride%20sweeps%20up%20inside%20you%20when%20you%20can%20start%20with%20a%20few%20eggs,%20some%20flour,%20and%20a%20little%20salt,%20and%20end%20up%20with%20thin,%20beautiful%20strands%20of%20dough.%20And%20when%20the%20dough%20gets%20cut%20into%20the%20cutest%20little%20circles%20and%20loaded%20with%20a%20filling%20that%E2%80%99s%20probably%20good%20enough%20to%20eat%20by%20the%20spoonful,%20it%E2%80%99s%20definitely%20enough%20to%20make%20you%20sit%20back%20and%20grin%20about%20it.%3C/p%3E%3Cp%3ERoasted%20Carrot%20&%20Ricotta%20Ravioli%3C/p%3E%3Cp%3EAdapted%20from%20Food%20&%20Wine,%20October%202010;%20makes%2040%3C/p%3E%3Cp%3Etime%20commitment:%201%20%E2%80%93%201.5%20hours%3C/p%3E%3Cp%3Eingredients%3C/p%3E%3Cp%3Efilling%3C/p%3E%3Cp%3Einstructions%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20F.%3C/p%3E%3Cp%3EPrepare%20the%20dough.%20In%20a%20food%20processor,%20pulse%20the%20flour%20with%20the%20salt,%20nutmeg%20and%20the%201%20tablespoon%20of%20semolina.%20Add%20the%20eggs%20and%20pulse%20until%20incorporated.%20With%20the%20machine%20on,%20add%20the%20olive%20oil%20in%20a%20thin%20stream%20and%20process%20just%20until%20moistened%20crumbs%20form.%20Turn%20the%20crumbs%20out%20onto%20a%20semolina-dusted%20work%20surface%20and%20knead%20just%20until%20a%20smooth%20dough%20forms.%20Wrap%20the%20dough%20in%20plastic%20and%20let%20stand%20at%20room%20temperature%20for%2030%20minutes.%3C/p%3E%3Cp%3EMeanwhile,%20roast%20the%20filling:%20In%20a%20baking%20dish,%20toss%20the%20carrots%20with%20the%20olive%20oil%20and%20season%20with%20salt%20and%20pepper.%20Cover%20with%20foil%20and%20bake%20for%20about%2030%20minutes,%20until%20tender%20and%20lightly%20browned.%20Let%20cool%20slightly.%3C/p%3E%3Cp%3EIn%20a%20small%20skillet,%20melt%20the%20butter.%20Add%20the%20shallot%20and%20cook%20over%20moderate%20heat%20until%20softened,%20about%203%20minutes.%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20combine%20the%20carrots,%20shallot%20and%20cream%20and%20puree%20until%20smooth.%20Transfer%20the%20puree%20to%20a%20bowl.%20Stir%20in%20the%20ricotta,%20Parmigiano%20and%20nutmeg%20and%20season%20with%20salt%20and%20pepper.%20Stir%20in%20the%20egg%20yolk.%3C/p%3E%3Cp%3EMake%20the%20ravioli:%20Cut%20the%20dough%20into%204%20equal%20pieces%20and%20cover%20with%20plastic%20wrap.%20Work%20with%201%20piece%20at%20a%20time:%20Flatten%20the%20dough%20into%20a%205-by-4-inch%20oval,%20about%201/2%20inch%20thick.%20Dust%20lightly%20with%20semolina.%20Roll%20the%20dough%20through%20a%20pasta%20machine%20at%20the%20widest%20setting.%20Fold%20the%20dough%20in%20thirds%20(like%20a%20letter),%20then%20run%20it%20through%20the%20machine%20at%20the%20same%20setting,%20folded%20edge%20first.%20Repeat%20the%20folding%20and%20rolling%20once%20more.%20Roll%20the%20dough%20through%20at%20successively%20narrower%20settings,%20two%20times%20per%20setting,%20until%20it%20is%20thin%20enough%20for%20you%20to%20see%20the%20outline%20of%20your%20hand%20through%20it.%20Lay%20the%20dough%20out%20on%20a%20work%20surface%20lightly%20dusted%20with%20semolina.%3C/p%3E%3Cp%3EBrush%20any%20semolina%20off%20the%20dough.%20On%20half%20of%20the%20dough,%20spoon%2010%201-teaspoon%20mounds%20of%20filling%20in%20two%20rows%20of%205,%20spacing%20apart%20by%20about%202%20inches.%20Cover%20with%20the%20other%20half%20of%20the%20dough%20and%20press%20down%20gently%20to%20get%20rid%20of%20any%20air.%20Using%20a%202%201/2%E2%80%B3%20cookie%20cutter,%20cut%20out%2010%20ravioli.%20Using%20the%20tines%20of%20a%20fork,%20seal%20all%20the%20way%20around%20each%20circle,%20and%20place%20ravioli%20on%20a%20large%20rimmed%20baking%20sheet%20lightly%20dusted%20with%20semolina.%20Repeat%20with%20the%20remaining%20pasta%20dough%20and%20filling.%3C/p%3E%3Cp%3EIn%20a%20large%20pot%20of%20boiling%20salted%20water,%20cook%20half%20of%20the%20ravioli%20over%20high%20heat%20until%20al%20dente,%20about%203%20minutes.%20Using%20a%20slotted%20spoon,%20transfer%20the%20ravioli%20to%20a%20platter.%20Repeat%20with%20the%20remaining%20ravioli%20and%20serve.%20(Ravioli,%20uncooked,%20can%20be%20frozen%20at%20least%20a%20month%20in%20advance.%20Freeze%20them%20individually%20on%20a%20baking%20sheet,%20then%20toss%20them%20into%20a%20bag%20together%20until%20n
