Root Beer Chocolate Chip Pancakes
Have you ever had Pancakes for Dinner?? Every once in a blue moon, Big J will want pancakes for dinner. That's fine by me:) He loves pancakes and he loves this recipe!! I have to admit, this recipe is pretty good. Next time you want to have pancakes, give this recipe a try. Pancakes are delicious for breakfast, lunch, dinner or anytime!
- 1-1/4 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon pumpkin pie spice
- 1 beaten egg
- 1 cup root beer (regular or diet)
- 1 tablespoon oil
- 1/3 cup mini chocolate chips
- butter
- real maple syrup
Stir together flour, sugar, baking powder, salt, baking soda, and pumpkin pie spice. Combine egg, root beer and oil; add all at once to flour mixture, stirring till blended. Batter with be thick. Pour batter onto a hot, lightly greased griddle or heavy skillet. Cook until golden brown, turning to cook other side when pancakes have a bubbly surface and slightly dry edges. Sprinkle mini chocolate chips on bubbly surface, cook 1 min. and then flip. Serve with butter and maple syrup. Note: My son Bobby likes to smother his pancakes in whipped cream:)
