Receta Rose Petal and Fruit Salad
by Veronica Gantley

Today is the feast of St Therese of the Child Jesus.

Since her symbol is the rose, I thought it would be fitting to make Rose Petal and Fruit Salad.

Let me start out by saying, use rose petals that have not been treated with pesticides.

I try to grow organic roses. I do not spray them. So, by the end of the season many have no leaves left, because of the black spot.

They sure are gorgeous when they do bloom.

When I say organic roses, that is what I am referring to, the ones that have never been treated with pesticides.

If your husband comes home with a dozen roses from the florist. Don't use them for this recipe.

I didn't use a lot of petals, just a cup, just enough for the rose petal essence and gorgeous color.

If you don't have organic roses, just substitute with more lettuce. It reminds me of the strawberry salad they make at Panera Bread.

Directions:

Toss salad ingredients together in a large bowl, except the pecans. Dry roast the pecans in a skillet until fragrant. Add to the salad.

Whisk dressing ingredients together in a separate bowl.

Drizzle Desired amount of dressing over the salad.

Serve and enjoy!

NOTE: If you are looking for more protein, you could add cooked chicken, shrimp or ham.

Peace be with you,

Veronica
