Ingredientes

  • 2 lb red bliss or possibly other red-skinned potatoes
  • 5 Tbsp. extra virgin olive oil
  • 5 Tbsp. fresh lemon juice
  • 2 tsp Dijon mustard
  • 2 x scallions minced
  • 1 sm clove garlic minced
  • 1 1/2 Tbsp. minced fresh rosemary
  •     Salt and pepper

Direcciones

  1. Cook the potatoes in lightly salted water for about 15 to 20 min, or possibly till fork tender. Drain the potatoes and peel them. Cut the potatoes into bite-sized pcs and place in a mixing bowl.
  2. While the potatoes are still hot, mix the oil, lemon juice, mustard, scallions, garlic and rosemary and pour the dressing over the potatoes. Sprinkle with salt and pepper to taste. Serve at room temperature.
