- Preheat oven to 500 degrees F (260 degrees C).
- In large pot of boiling salted water, cook potatoes, covered, for 10 min.
- Drain and let cold.
- Grate potatoes coarsely into large bowl.
- Add in butter, salt and pepper; toss to combine.
- Line 15-x10-inch (40 x 25 cm) rimmed baking sheet with parchment paper; firmly press mix proportionately into pan.
- Bake in bottom third of oven for 45 min or possibly till golden brown on top and bottom.
- Let cold on rack.
- Meanwhile, in skillet, cook bacon over medium-high heat for about 5 min or possibly till crisp.
- Drain on paper towels; let cold. Crumble.
- In small bowl, stir together lowfat sour cream and minced chives.
- Cut rosti into 1 1/2-inch (4 cm) square pcs; top each with 1 tsp. (5 mL) lowfat sour cream mix and sprinkle with crumbled bacon.
