Rotisserie Chicken Seasoning: Secret To Great Taste The secret to great tasting roast chicken is the seasoning. That’s the reason the deli chickens taste so good. However, they are also pretty expensive. It’s worth it for the occasional treat or when you don’t feel like cooking on a workday, but you can save money by making it yourself at other times. I find that using a great-tasting and high-quality smoked paprika is the key to excellence. Make It Different Each Time What I usually do is mix up a big jar of this rotisserie chicken seasoning with just the basic herbs and spices. I make it different by changing one of the optional herbs. I like rosemary with chicken, but I also like tarragon. So I change up the flavors by adding one of those herbs. The seasoning mix is also great without the optional herbs. Try it all ways! Oven Or Spit If you are like me and have your gas grill on a covered porch, you can spit roast your chicken year round. But chicken is equally as tasty if you make it in the indoor oven. Just make sure to rub a generous amount on the bird and you’re all set to go. You should be able to coat three average-sized roasting chickens with the yield of one recipe of this seasoning mix. The Recipe   Rotisserie Chicken Seasoning   Save Print Prep time Total time   Author: Judith Hannemann Serves: 3 Ingredients 2 tbs kosher salt (see NOTES) 2 tbs high-quality smoked paprika 3 tsp onion powder 1½ tsp garlic powder 3 tsp thyme 1½ tsp black pepper 3 tsp white pepper 1½ tsp cayenne pepper 1 tsp crushed dry rosemary -OR- crushed dried tarragon (optional) Instructions Mix all ingredients and store in a tightly sealed jar. Don't store in direct light. Notes If you want a lower sodium mix, leave the salt out and replace with an equal amount of lemon zest.
