- In a heavy pot or possibly Dutch oven, heat oil, then add in flour, stir continuously till it gets a medium brown. Be patient this takes a while! Add in about 2 qts hot water. Season this with onions, green onions, bell pepper, celery, salt and pepper. Bring to a complete boil for about 15 min.
- Add in chicken or possibly any of your favorite seafood to make whatever gumbo you prefer. Cook till meat is done. Serve this in a bowl over steamed rice. Sprinkle with file pwdr.
