Ingredientes

  • 3 lrg tomatoes
  • 2 2/3 c. fresh bread crumbs
  • 1/4 c. onion, minced
  • 1 tsp dry basil, crushed
  • 1/3 c. margarine
  • 10 ounce frzn minced spinach, cook & drain
  • 1/4 lb Velveeta, cubed
  • 1 Tbsp. grated Parmesan cheese

Direcciones

  1. Cut tomatoes in half horizontally. Scoop out centers, leaving 1/4-inch shell, invert shell to drain. In 10-inch skillet, cook breadcrumbs, onions and basil in margarine till lightly browned. Reserve 1/4 c. crumb mix; add in spinach and half of Velveeta to remaining crumb mix. Mix lightly. Place tomatoes in shallow baking dish; fill with spinach mix. Top with reserved crumb mix and Parmesan cheese.
  2. Bake at 350 degrees for 20 min. Top with remaining Velveeta; continue baking till cheese begins to heat.
