Receta Rum Cocktails
After busy making mooncakes for the Festival, I need something refreshing to relax myself. Let's check what I have in my fridge...pineapple, red apples and some limes..just nice to make to 2 glasses of cocktail with rum added.
Prepare two cleaned tall glasses and rim the outside of the glasses with 1 quarter of lime.
Pour some Kosher salt on a plate.
Press the rim of a glass into the salt to rim the edge and put it in the fridge for later use.
- 250g Pineapple - cut into cubes
- 2 large Red apples - skinned and cut into cubes
- 150-200ml Cranberry juice
- 2-4 slices Lime
- 2 tbsp Dark Rum
Method:
Puree pineapple cubes and strain.
Blend red apples together with about 50ml cranberry juice, strain and mix with the balance 100ml cranberry juice.
Take out the frosted glasses from fridge and fill 3-4 ice cubes into it.
Pour half of the red apples juice into glasses.
Add 2 tbsp dark rum into pineapple juice, stir well and pour equally to the glasses and top up with balance red apples juice.
Add 1-2 slices of lime in it and serve.
