Ingredientes

  • 2 lrg Ripe bananas, peeled
  • 1 1/2 c. Sugar
  • 3 x Large eggs
  • 1 tsp Baking pwdr
  • 1 tsp Salt
  • 3/4 c. Dark rum *
  • 1 c. Walnuts,coarsely minced
  • 1/4 c. Lowfat milk
  • 3/4 c. Butter, softened
  • 2 1/2 c. All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Allspice
  • 1 c. Raisins

Direcciones

  1. Mash bananas to make 1 c.. Combine with lowfat milk. Cream sugar and butter till light and fluffy. Beat in Large eggs till blended. Combine flour, baking pwdr, soda, salt and allspice. Beat 1/3 flour mix into egg mix till blended. Beat 1/2 banana mix till blended. Repeat ending with flour mix. Beat in rum till well blended, stir in raisins. Pour into 10-inch well greased fluted tube pan. Bake in 350'F. oven for 50 min or possibly till cake tests done. Invert on wire rack to cold. Dust with confectioner's sugar.

  3. For a flavor variation, instead of rum use 3/4 c orange juice and add in 1 TBSP grated orange rind to batter.
