%20easy%20because%20it%20doesn't%20use%20pie%20weights,%20pie%20dishes%20or%20even%20a%20tart%20tin.%20Any%20pizza%20or%20biscuit%20tray%20will%20do%20and%20there%20are%20very%20few%20ingredients.%20(Perfect%20for%20reciting%20to%20listeners%20over%20a%20radio%20mic!)%3C/p%3E%3Cp%3EIt's%20a%20cheese%20and%20tomato%20pie%20for%20grown-up's.%20That's%20not%20to%20say%20young%20folk%20won't%20like%20it%20-%20it%20depends%20on%20the%20width%20of%20their%20palate's.%20But%20of%20course%20even%20adults%20could%20either%20love%20it%20or%20leave%20it.%20I%20used%20a%20sweet%20variety%20of%20tomato%20being%20the%20gorgeous%20tasting,%20dark%20brown%20kumato's.%20The%20only%20other%20ingredient%20for%20the%20filling%20is%20soft%20goats%20cheese%20(not%20the%20kind%20packed%20in%20oil).%20I%20chose%20one%20covered%20in%20(edible)%20ash%20because%20of%20the%20nice%20colour%20contrast%20it%20provides%20in%20a%20photo,%20but%20mostly%20because%20I%20seem%20to%20like%20ash%20coated%20cheeses.%20My%20trip%20to%20Yarra%20Valley%20Dairy%20late%20last%20year%20included%20a%20cheese%20platter%20lunch%20shared%20with%20my%20husband..and%20we%20both%20agreed%20the%20ash%20covered%20goats%20cheeses%20were%20a%20highlight.%20I've%20made%20the%20pie%20wholemeal%20because%20I%20think%20it%20just%20'works'..%20especially%20with%20the%20addition%20of%20vintage%20cheese%20in%20the%20dough%20(or%20mature%20cheddar,%20whichever%20you'd%20prefer).%20It's%20like%20a%20rustic%20'open%20pastie'%20with%20sweetness%20and%20tanginess%20to%20surprise%20&%20delight%20your%20taste%20buds.%20Bon%20Appetit!%3C/p%3E%3Cp%3ERustic%20Kumato%20&%20Goats%20Cheese%20Pie%3C/p%3E%3Cp%3EServes%204%20to%206%3C/p%3E%3Cp%3EPASTRY%3C/p%3E%3Cp%3E-Chopped%20greens%20to%20serve%20also%20eg.%20watercress%20or%20fresh%20basil%20or%20chives.%3C/p%3E%3Cp%3E-Optional:%20A%20quick%20drizzle%20of%20olive%20oil%20over%20the%20pie%20before%20serving%3C/p%3E%3Cp%3E-Oil%20for%20greasing%20pan%3C/p%3E%3Cp%3E-Some%20recipe's%20ask%20for%20pie%20dough%20to%20be%20made%20in%20a%20food%20processor.%20I%20don't%20have%20one,%20so%20I%20made%20this%20by%20hand%20and%20it%20was%20easy.%20But%20by%20all%20means%20use%20a%20food%20processor%20with%20a%20dough%20hook%20if%20it%20suits%20you.%3C/p%3E%3Cp%3E-In%20a%20bowl,%20rub%20the%20cold%20butter%20into%20the%20wholemeal%20flour%20until%20it%20resembles%20bread%20crumbs%20and%20looks%20'crumbly'.%20Try%20to%20do%20this%20quickly%20if%20using%20your%20clean%20hands,%20you%20don't%20want%20the%20butter%20to%20get%20warm%20and%20melt.%3C/p%3E%3Cp%3E-Mix%20in%20the%20vintage%20cheese%20or%20mature%20cheddar.%3C/p%3E%3Cp%3E-Add%203%20to%204%20tablespoons%20of%20water%20and%20mix%20into%20a%20ball%20of%20dough.%3C/p%3E%3Cp%3E-Cover%20dough%20with%20plastic%20wrap%20and%20refrigerate%20for%20half%20an%20hour%3C/p%3E%3Cp%3E-In%20the%20meantime,%20preheat%20your%20oven%20to%20180%20degree's%20C%20or%20350%20F.%3C/p%3E%3Cp%3E-When%20pastry%20is%20ready%20to%20work%20with%20(after%20fridge%20time),%20roll%20it%20out%20onto%20a%20lightly%20floured%20surface%20with%20a%20rolling%20pin.%20You%20want%20a%20circle%20shape%20about%2030%20to%2035%20centimetre's%20or%20so%20in%20diameter,%20but%20not%20less.%20Don't%20worry%20if%20the%20pastry%20cracks%20around%20the%20edges%20and%20appears%20fragile%20and%20like%20it%20might%20crumble%20apart%20on%20you.%20Work%20the%20dough%20with%20your%20fingers%20to%20mend%20any%20'cracks'%20that%20appear.%3C/p%3E%3Cp%3E-Carefully%20wrap%20the%20circle%20of%20pastry%20over%20your%20rolling%20pin%20and%20lift%20it%20onto%20a%20greased%20baking%20tray.%20I%20used%20a%20non-stick%20pizza%20tray.%20As%20a%20guide,%20mine%20didn't%20crack%20or%20fall%20apart%20during%20this%20stage,%20yours%20shouldn't%20either.%3C/p%3E%3Cp%3E-Carefully%20unroll%20your%20pastry%20on%20the%20tray%20and%20brush%20with%20a%20beaten%20egg%20yolk.%20You'll%20need%20some%20of%20the%20egg%20yolk%20to%20brush%20over%20the%20finished%20pie%20before%20putting%20it%20in%20the%20oven.%20Add%20some%20milk%20later%20to%20the%20egg%20yolk%20if%20you%20don't%20have%20enough%20yolk%20left.%20If%20using%20small%20eggs%20you%20might%20need%20two%20egg%20yolks.%3C/p%3E%3Cp%3E-Sprinkle%20breadcrumbs%20evenly%20over%20the%20egg-washed%20pastry%20surface.%3C/p%3E%3Cp%3E-Tomato%20note:%20Feel%20free%20to%20semi-deseed%20your%20tomatoes.%20Mine%20were%20quite%20juicy%20and%20the%20very%20centre%20of%20my%20pie%20was%20a%20little%20moist.%20I%20should%20have%20roughly%20deseeded%20them%20(ie.%20not%20being%20rough%20with%20the%20tomatoes,%20but%20scraping%20away%20at%20the%20seeds%20without%20being%20overly%20fussy%20or%20completely%20deseeding%20them)%20and%20I%20think%20the%20centre%20of%20my%20base%20would%20have%20been%20a%20little%20more%20crispier.%3C/p%3E%3Cp%3E-Place%20tomato%20slices%20in%20a%20circle,%20slightly%20overlapping%20each%20other%20until%20you%20fill%20the%20circle%20and%20you%20have%20a%20big,%20filled%20circle%20of%20tomatoes%20(see%20blog%20photo's).%20Be%20sure%20to%20leave%20a%20large%20border%20around%20the%20pie%20because%20you'll%20be%20folding%20the%20edges%20over%20onto%20the%20tomato/cheese%20layers.%3C/p%3E%3Cp%3E-To%20create%20'even%20crumbled%20chunks'%20of%20goats%20cheese,%20I%20sliced%20my%20cheese%20first%20and%20then%20crumbled%20the%20slices%20over%20the%20tomatoes.%3C/p%3E%3Cp%3E-When%20finished%20crumbling%20the%20goats%20cheese,%20fold%20over%20the%20edges%20of%20the%20pastry,%20section%20by%20section%20onto%20the%20tomato%20and%20cheese.%3C/p%3E%3Cp%3E-When%20pastry%20edges%20are%20folded%20over,%20you'll%20have%20an%20exposed%20'filling%20circle'-%20namely%20goats%20cheese%20in%20the%20middle%20(uncovered)%20which%20is%20mostly%20the%20'rustic'%20part%20(being%20its%20appearance).%20Brush%20the%20pie%20with%20the%20remaining%20egg%20yolk,%20just%20the%20pastry,%20not%20the%20filling%20(and%20again,%20if%20there%20isn't%20enough%20left%20over,%20just%20mix%20it%20with%20a%20little%20bit%20of%20milk%20to%20make%20it%20stretch).%3C/p%3E%3Cp%3E-Bake%20for%20around%20half%20an%20hour%20or%20until%20the%20pastry%20is%20golden%20and%20you%20can%20see%20closely%20that%20the%20cheese%20in%20the%20pastry%20dough%20has%20melted.%3C/p%3E%3Cp%3E-Cut%20into%20wedges%20or%20slices%20and%20carefully%20serve%20onto%20a%20plate%20(pastry%20will%20be%20of%20a%20crumbly%20texture).%3C/p%3E%3Cp%3E-Serve%20with%20salt%20and%20pepper%20and%20(dare%20I%20say%20it)%20an%20optional%20drizzle%20of%20olive%20oil%20(like%20all%20the%20TV%20chef's%20over-do)%20and%20some%20chopped%20chives%20or%20watercress%20or%20fresh%20basil.%3C/p%3E){kind=link}
