%20to%20use%20some%20leftover%20sausage%20from%20another%20recipe%20I%20made%20but%20then%20I%20realized%20that%20this%20wouldn%E2%80%99t%20be%20enough,%20so%20instead%20I%20decided%20to%20make%20a%20galette%20and%20improvise%20with%20ingredients%20I%20had%20in%20the%20fridge.%20%20I%20had%20some%20lountza%20(smoked%20pork%20fillet)%20which%20I%20had%20brought%20along%20from%20Cyprus,%20I%20had%20leftover%20boiled%20chicken,%20after%20making%20avgolemono%20the%20previous%20day,%20I%20had%20leftover%20cheeses%20from%20making%20the%20pizza%20and%20of%20course%20there%E2%80%99s%20always%20ketchup%20and%20mustard%20in%20the%20fridge.%3C/p%3E%3Cp%3EThe%20main%20ingredient%20of%20this%20galette%20is%20the%20sausage.%20%20Living%20in%20Greece%20I%20used%20one%20of%20my%20favourite%20Greeek%20sausages%20but%20feel%20free%20to%20add%20your%20own%20favourite%20type.%20%20Lountza%20can%20be%20substituted%20with%20pasto%20or%20with%20other%20smorked%20pork%20or%20other%20charcuterie%20of%20your%20choice%20and%20leftover%20chicken%20can%20also%20be%20substituted%20with%20other%20leftover%20cooked%20meat.%20%20Cheese,%20such%20as%20anthotyro%20or%20ricotta,%20can%20also%20be%20added%20in%20the%20filling.%20%20Feta%20is%20salty,%20so%20if%20you%20want%20to%20add%20some%20this%20will%20depend%20on%20how%20salty%20your%20other%20ingredients%20are.%3C/p%3E%3Cp%3EAny%20kind%20of%20cheese%20your%20use%20for%20pizza%20can%20be%20used%20but%20you%20can%20also%20try%20grated%20halloumi,%20graviera%20or%20other%20Greek%20cheeses.%3C/p%3E%3Cp%3EThe%20reason%20I%20fried%20the%20sausage%20first,%20was%20to%20remove%20as%20much%20fat%20as%20possible.%20%20Lountza%20on%20the%20other%20side%20has%20no%20fat%20at%20all%20and%20can%20be%20eaten%20raw%20but%20when%20fried%20its%20taste%20transforms%20into%20something%20amazingly%20delicious.%20%20Boiled%20chicken%20is%20rather%20bland,%20so%20after%20removing%20bones%20and%20skin%20I%20chopped%20it%20into%20smaller%20pieces%20and%20lightly%20sauteed%20a%20couple%20of%20roasted%20garlic%20and%20flavoured%20the%20chicken.%20%20The%20sausage%20and%20lountza%20were%20then%20cut%20into%20small%20pieces%20and%20mixed%20in%20with%20the%20chicken.%20%20I%20did%20not%20add%20any%20salt,%20herbs%20or%20spices%20as%20I%20wanted%20the%20flavours%20of%20the%20sausage%20and%20lountza%20to%20be%20highlighted%20in%20this%20galette.%3C/p%3E%3Cp%3EThe%20sauce%20I%20used%20was%20just%20simple%20ketchup%20and%20mustard,%20mixed%20together.%20%20I%20made%20some%20extra%20to%20serve%20it%20with,%20as%20it%20matches%20well%20with%20the%20galette,%20so%20if%20you%20want%20some%20leftover,%20just%20mix%20more%20of%20these%20ingredients.%3C/p%3E%3Cp%3EAlthough%20I%20was%20a%20bit%20worried%20if%20the%20dough%20would%20rise%20properly,%20it%20rose%20perfectly%20and%20the%20rolling%20of%20the%20dough%20was%20easy%20peasy.%20%20I%20didn%E2%80%99t%20even%20need%20to%20flour%20my%20working%20surface.%3C/p%3E%3Cp%3EThe%20crust%20was%20delicious%20and%20its%20texture%20was%20more%20like%20a%20soft%20biscuit%20rather%20than%20bread.%20%20The%20filling%20was%20delicious%20but%20this%20will%20depend%20on%20what%20ingredients%20you%20will%20use.%20%20If%20you%20use%20prime%20quality%20ingredients,%20you%20are%20bound%20to%20get%20prime%20quality%20results.%3C/p%3E%3Cp%3ERustic%20whole%20wheat%20Galette%20with%20Sausage%3C/p%3E%3Cp%3EMakes:%20%205%3C/p%3E%3Cp%3EFor%20the%20dough:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPrepare%20the%20dough%20(see%20step%20by%20step%20instructions)%20and%20let%20it%20rise,%20covered%20in%20a%20warm%20place.%20%20No%20extra%20olive%20oil%20was%20used%20in%20this%20recipe.%3C/p%3E%3Cp%3ECut%20the%20sausage%20in%20the%20middle,%20lengthwise%20and%20if%20you%20like%20you%20can%20cut%20it%20into%20smaller%20pieces%20and%20fry%20it%20in%20a%20nonstick%20frying%20pan.%20Place%20it%20on%20kitchen%20paper%20and%20set%20aside%20until%20you%20can%20handle%20and%20cut%20it%20into%20smaller%20pieces.%3C/p%3E%3Cp%3EWipe%20the%20frying%20pan%20and%20heat%201%20tablespoon%20olive%20oil%20and%20lightly%20fry%20lountza%20on%20both%20sides.%20Set%20aside%20and%20cut%20it%20into%20smaller%20pieces.%3C/p%3E%3Cp%3EAdd%20the%20garlic%20in%20the%20frying%20pan%20and%20press%20it%20a%20little%20to%20mash%20it.%20Add%20the%20chopped%20chicken%20and%20stir%20a%20couple%20of%20times,%20just%20to%20flavour%20it.%20%20Add%20the%20sausages%20and%20lountza%20back%20in%20the%20frying%20pan%20and%20mix%20all%20together.%20%20Set%20aside%20to%20cool.%3C/p%3E%3Cp%3EKnead%20the%20dough%20a%20couple%20of%20times%20and%20divide%20it%20into%20five%20equal%20pieces.%3C/p%3E%3Cp%3ERoll%20out%20the%20dough%20until%20it%20reaches%2020%20cm%20diameter.%3C/p%3E%3Cp%3EMix%20the%20mustard%20with%20ketchup%20and%20spread%201/5%20over%20the%20dough.%3C/p%3E%3Cp%3EPut%20the%20cheese%20in%20the%20middle%20of%20the%20dough,%20leaving%20about%20an%20inch%20margin.%20%20Add%201/5%20of%20the%20filling%20and%20cover%20with
