Receta S'mores Pancakes
My children absolutely LOVE anything s'mores flavored....waffles, candy, icecream...you name it, they love it.
I discovered this recipe when we first moved here to Albuquerque. We had a bag of mini-marshmollows, some chocolate chips, and some graham crackers to use up.
Of course, I did some research and found this recipe on the Bisquick website. I fiddled around with it until I figured out the correct measurements and method for making these just right...i.e...without a sticky mess.
What's cool about this recipe is...after the marshmallows melt inside the pancake, it makes a wonderful surprise for those who will eat them...melted marshmallows with graham cracker sprinkles inside. Even Husband Man and I have been known to eat just one!

S'mores Pancakes
(makes 10 pancakes)
Ingredients:
- 2 cups Bisquick baking mix
- 1 and 1/3 cups milk
- 2 tbsp. sugar
- 1 egg
- Bag of mini-marshmallows
- Bag of semi-sweet chocolate chips or chocolate pieces
- 5 tsp. of crushed graham cracker crumbs
Directions:
1. Heat a non-stick griddle/pan to medium low heat.
2. Combine Bisquick, milk, sugar, and egg in a medium bowl, making sure to mix well.
3. Place 1/4 cup of the batter onto the griddle.
4. Take 5-6 mini marshmallows and place in the middle of the batter.
5. Cover marshmallows with 1/2 tsp. of the crushed graham crackers.
6. Cover marshmallows with 2-3 tbsp. of batter. Making sure to cover all of the marshmallows.
7. Cook pancakes on each side for 2-3 minutes.
8. Top each pancake with chocolate chips and toppings of choice.
**Libby's Notes: You MUST use mini-marshmallows with this recipe. DO NOT use the jumbo or big ones or else you will end up with a sticky mess...even if you cut them up. Do not use the marshmallow creme either. Stick with the minis. Also, it's best to place the chocolate chips on top of the pancakes after they are cooked vs. placing them inside with the marshmallows. Stick with using milk and do not substitute it with buttermilk.**
