Receta Saffron Rice Pudding
Rice puddings are found in nearly every area of the world. Recipes can greatly vary even within a single country. The dessert can be boiled or baked.
Saffron Rice is also known as kheer in India. Once you have tasted this recipe you will not ask for any other rice pudding.
Saffron, the most expensive spice in the world, is grown in the Kashmir valley in North India. Kashmiri saffron is the best saffron in the whole world.
For this recipe use the boiling method.

- ½ cup rice
- 3 cups water
- Few strands of saffron
- 1 litre milk
- ¾ cup sugar
- Handful of almonds and pistachios
Method
Boil the rice in water until totally soft.
Use a masher to mash the rice once the water has completed, or use a hand blender to do this.
Pour the milk in a pot, add the sugar,saffron,and the cooked rice.
Stir continuously as this will tend to stick to the bottom of the pot.
Continue to stir until you feel the pudding is starting to thicken.
Cool and refrigerate.
Garnish as desired with crushed almonds and pistachios.
