Receta Saffron Rice with Meatballs; Quick Spiced Potatoes and Cauliflower with Baby Shrimp: A Review of The Bengali Five Spice Chronicles

- Meatballs:
- 1 small onion
- 1-inch piece fresh ginger, peeled
- 2 cloves garlic
- 2 green chilies (I omitted)
- 1 pound ground chicken (I doubled the recipe and used 1 lb ground turkey and 1 lb ground beef)
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1 teaspoon garam masala
- 1 teaspoon cumin-coriander powder (1/2 of each)
- Rice:
- 3 to 4 tablespoons oil
- 1 teaspoon ghee
- 3 green cardamom pods (I used equivalent cardamom seeds as that is what I had)
- 2 cloves
- 2-inch cinnamon stick, broken into pieces
- 1 large onion, thinly slices
- 1 teaspoon sugar
- 2 cups basmati rice, soaked for about 30 minutes and drained
- 2 teaspoons salt
- 1 cup low fat Greek yogurt, beaten till smooth
- 1/2 cup frozen peas
- 1 teaspoon saffron strands

- 1 tablespoon oil
- 1 teaspoon panch phoron
- 1 teaspoon fresh ginger paste (I used minced ginger, about double that)
- 3 green chilies, slit lengthwise (I left out)
- 1 cup chopped cauliflower
- 1 large potato, peeled and cut into wedges (I did not peel and I cut into chunks)
- 1/2 teaspoon turmeric
- 2 red tomatoes, chopped (mine were frozen so I peeled them)
- (1/2 cup frozen peasâmy addition)
- 1 teaspoon salt
- 1/2 cup medium shelled and de-veined shrimp (mine had the tails still attached)
- 1/2 cup low-fat sour cream (I used Greek yogurt)
- 2 tablespoons chopped cilantro
