Ingredientes

  • 1/2 med. cucumber, sliced
  • 3 tomatoes, cut in wedges
  • 1 grapefruit, peeled and sectioned
  • 2 avocados, seeded, peeled and thinly sliced
  • 1 green pepper, thinly sliced
  • 4 fresh peaches, peeled, pitted and thinly sliced
  • 1 head Boston lettuce, torn bite size
  • 1/3 c. plain yogurt
  • 1/3 c. lowfat sour cream
  • 1/3 c. salad oil
  • 1/4 c. minced onion
  • 2 tbsp. orange juice
  • 2 tbsp. white wine vinegar
  • 1 egg yolk
  • 1 tbsp. lemon juice
  • 1 tbsp. sugar
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard

Direcciones

  1. Arrange vegetables and fruit in large salad bowl. Combine remaining ingredients except lettuce; mix very thoroughly. Pour sufficient dressing over fruit and vegetables to moisten. Refrigerate1 hour. Just before serving, add in lettuce. Toss with salad. Makes 8 to 10 servings.
