Ingredientes

  • 20 lbs ground beef
  • 16 oz eggs
  • 2 lbs regular bread crumbs (not panko)
  • 1/4 cup garlic powder
  • 1/4 cup onion powder
  • 1/2 cup worchestershire sauce
  • 1 quart milk
  • 2 oz beef base
  • 2 oz LoSod beef base
  • 2 Tbsp salt
  • 2 Tbsp papper

Direcciones

  1. Combine spiced with bread crumbs.
  2. Blend the bases with the milk to make it liquid.
  3. Add the eggs and worchestershire sauce in mixing bowl, with paddle.
  4. Begin mixing beef and add the milk-egg-base mixture.
  5. As soon as it all comes together add the dry mix.
  6. Mix only until everything blends together.
  7. Do not over mix or steaks will be tough.
  8. Cook off a little 1 oz burger to taste for seasoning.
  9. Form into individual 4 oz oval/football shaped steaks (#8 scoop)
  10. Bake in a 325 F oven for 45 minutes.
  11. Pan up in hotel ppans for service, garnish with cooked onion beef au jus.
