Receta Salmon Fin Soup
I am not really sure if this is a Chinese dish but I categorized it as Chinese because the recipe happened to be from a Chinese person I met at the Asian Grocery. One day I was doing some groceries and saw this salmon fins sold in our local fishmonger, I don’t know how to use them or cook them so when some Chinese guy passed by and bought some of this I asked him how he prepares them. He said they usually cook it as a soup with tomatoes and onions, as simple as that. For me that sounds easy enough and tasty so I bought some and made it at home and since that day we have this type of soup once in a while, I love the texture of the fins, its meaty and fatty at the same time.
Salmon Fin Soup
800 g salmon fins 3 large plump red tomatoes 1 large onion, chopped bunch of basil leaves fish sauce ground white pepper 3 cups water freshly ground black pepper
In a pot add water, onion and tomatoes. Bring to a boil and simmer for 5 minutes. Add salmon fins bring it back to a boil then simmer for 5-7 minutes or until salmon is just cooked. Turn heat off then add basil leaves, season with fish sauce and white pepper. Serve while hot. 3.2.2708
