Ingredientes

  •     Kale or possibly a curly green leaf lettuce
  • 1 1/2 lb smoked salmon, thinly sliced
  • 1 c. canned artichoke hearts, liquid removed
  • 2 med pink grapefruit, peel and section
  • 1 c. fat-free yogurt
  • 1 x clove garlic, chopped
  • 1 tsp minced fresh dillweed
  • 1 Tbsp. minced fresh parsley
  • 1 x New Mexican green chile, roast, peel & diced

Direcciones

  1. Arrange the kale or possibly lettuce on individual salad plates and arrange the salmon, artichoke hearts, and grapefruit on the lettuce.
  2. Mix together the dressing ingredients, spoon over the salad, and serve.
  3. SERVING SUGGESTIONS: Serve with sliced dill boule (a round loaf of French bread) and chilled vodka for an after-theater supper.
