%20and%20talks%20of%20future%20travels%20and%20projects.%20This%20time,%20with%20our%209%20month%20old%20daughter,%20it%20was%20filled%20with%20Nirvana's%20MTV%20unplugged%20album%20on%20repeat%20(it%20was%20a%20surefire%20way%20to%20get%20her%20to%20sleep),%20and%20talks%20of%20potentially%20stopping%20at%20the%20next%20rest%20stop,%20what%20she%20was%20going%20to%20eat,%20and%20diapers.%20Wow,%20how%20times%20have%20changed.%3C/p%3E%3Cp%3ESo%20after%20what%20seemed%20like%20endless%20driving%20on%20the%20French%20highways,%20mediocre%20rest%20stops%20and%20not%20much%20napping%20on%20my%20part,%20a%20late%20lunch%20and%20a%20little%20ros%C3%A9%20in%20the%20garden%20of%20our%20friends'%20home%20was%20welcome.%20And%20for%20lunch?%20A%20wonderful%20fillet%20of%20salmon%20baked%20en%20papiotte%20(in%20a%20parchment%20paper%20pocket)%20with%20boursin%20cheese%20and%20tomatoes.%20It%20was%20so%20delicious%20and%20so%20flavorful.%20Even%20our%209%20month%20old%20daughter%20loved%20it!%3C/p%3E%3Cp%3ENow%20that%20we%20are%20back%20home,%20I%20wanted%20to%20recreate%20this%20wonderful%20lunch%20that%20we%20had%20on%20our%20arrival.%20And%20it%20wasn't%20just%20because%20we%20had%20been%20driving%20that%20it%20tasted%20so%20good.%3C/p%3E%3Cp%3ENot%20only%20is%20this%20salmon%20impressive,%20it%20only%20requires%204%20ingredients!%20It's%20a%20great%20entertaining%20meal%20because%20you%20can%20prepare%20everything%20in%20advance%20and%20put%20the%20parchment%20pockets%20in%20the%20fridge%20until%20you%20are%20ready%20to%20bake.%20Then%20place%20them%20in%20the%20oven%20and%20that's%20it!%20You%20still%20get%20to%20socialize%20while%20dinner%20is%20being%20baked%20in%20the%20oven.%20Serve%20the%20parchment%20pockets%20directly%20on%20your%20guests%20plates%20so%20they%20get%20to%20open%20the%20package%20themselves%20to%20see%20what's%20inside!%3C/p%3E%3Cp%3ESalmon%20with%20Boursin%20Cheese%20&%20Tomatoes%20en%20Papiotte%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EPlace%20each%20fillet%20of%20salmon%20on%20one%20side%20of%20a%20large%20piece%20of%20parchment%20paper%20(should%20be%20large%20enough%20to%20fold%20over%20and%20roll%20the%20edges).%20Spread%20each%20fillet%20with%20a%201/4%20of%20the%20boursin%20cheese.%20Sprinkle%20with%201/4%20of%20the%20parsley%20and%20tomato.%20Fold%20the%20parchment%20paper%20over.%20Then%20fold%20all%20the%20sides%20to%20form%20a%20sealed%20pocket.%20Place%20on%20a%20baking%20sheet%20and%20bake%20in%20a%20preheated%20350%20degree%20oven%20for%20about%2020-25%20minutes.%20Serve%20in%20the%20pockets!%3C/p%3E){kind=link}
