Ingredientes

  • 1 c. extra virgin olive oil divided
  • 2 lrg onions sliced
  • 2 x garlic cloves sliced
  • 4 sprg fresh thyme
  • 1 lb salted cod fish soaked in cool
  •     water overnight, changing water 3 times
  • 2 lrg tomatoes minced
  •     Kosher salt to taste
  •     Freshly-grnd black pepper to taste
  •     Sliced scallion for garnish

Direcciones

  1. In a large skillet over high heat put 1/2 c. of the extra virgin olive oil, add in the onions garlic, and thyme. Allow the onions to cook for 6 min.
  2. Cut the salt fish into 1-inch pcs, and add in them to the pot. Cook for 5 min, add in the tomatoes, and the rest of the oil. Season with salt and pepper, to taste, and let simmer for 15 min more. Garnish with sliced scallions.
  3. This recipe yields 4 to 6 servings.
